Chef Bo shares that this dish is something we look forward to each year.
Roselle is a truly seasonal ingredient, available only for a brief moment in time.

To be able to enjoy it is not something we take for granted
It is a small moment of good fortune.

The inspiration comes from Khun Lawan,
one of the pioneers of organic farming in Chiang Mai,
who would pound roselle with garlic, then mix it through rice, finishing with crispy fried garlic.

The result is vibrant in colour, naturally striking,
and offers a thoughtful interpretation of "khao kan jin"
which traditionally uses blood as a key ingredient.

At Bo.lan, we choose to work with seasonal plants
to express flavour, ideas, and the knowledge passed down over time
always with respect for nature and the people behind each ingredient

It seems to be in the 1992 version of the Dictionnaire Historique de la Langue Française, though. The word appeared in 1946.

Also, in the Dictionnaire Suisse Romand : Amuse-bouche is a euphemism, created by analogy with amuse-gueule. Some restaurants, embarrassed to use the term "amuse-gueule", replaced it with "amuse-bouche". The term "amuse-bouche" has only been picked up by French lexicographers (in France) since 1992; others date it to 1980. It took root in Switzerland as early as 1975.

This is Mae Phosop " แม่โพสพ " the Rice Goddess of Thailand.
She is not mythology to us. She is a reminder.

In Thailand, we have long understood that the natural world is alive with the presence of spirits that dwell in rivers, in soil, in forests, in the fields that feed us. Mae Phosop watches over the rice. She is patient, generous, and quietly powerful. She asks for nothing except that we do not forget where our nourishment comes from.

At Bo.lan, rice is not a side. It is not a backdrop. Rice is the heartbeat of Thai food. It shapes the rhythm of a meal, the balance of flavours, the way a dish breathes on the table.

Every bowl of rice that arrives at your table carries within it the work of a farmer's hands, the care of the soil, the patience of rain and sun and season. ✨Before the feast begins at Bo.lan, your journey opens with a series of small bites.

In classical Thai cuisine there is no direct equivalent of the French amuse-bouche. So we created our own interpretation drawing inspiration from Thai afternoon snacks, salads, and single-bite dishes, carefully reimagined in miniature.

🌿At Bo.lan we call this moment เริ่มแรกระเริงรส a phrase crafted for its rhythm and sound, meaning the joyful beginning of flavours. You may receive three bites… sometimes five. Each one is complementary, yet thoughtfully listed on the menu.
Traditionally an amuse-bouche is meant to amuse the mouth. a palate opener.

At Bo.lan, it serves another purpose too
A brief pause.
A moment of pleasure.
And a little time for our kitchen to cook the rest of your meal properly.
