Our bakery’s different because we still make things the old-fashioned way, the way my Mom used to. We spend a lot of time and effort training new staff in our methods, and we’ve been rewarded with a group of bakers that really know their stuff. We use the finest ingredients, with recipes and techniques that have been handed down for generations, augmented by Add’s amazing ability to adapt farang r

ecipes to local ingredients, equipment, and staff. An example, if you will. In most bakeries – not just in Phuket, but all around the world these days – making a chocolate chip muffin is a boring, rote experience. You measure out so much yellow cake mix, stick it in a mixer with powdered milk and water, toss in a cup of enhancer (a chemical concoction chock full of emulsifiers and preservatives), add some cheap chocolate chips, beat the hell out of it, slap it in the oven, and viola! a chocolate chip muffin. We don’t work that way. We build the batter from scratch, in a specific order, mix it carefully by hand, the way my Mom taught me. We use premium chocolate chips, and bake to golden perfection. You can taste the difference. Our muffins have a distinctive texture, not at all like yellow cake. The chocolate doesn’t leave a waxy residue in your mouth. There’s no cloying sweetness. No preservatives. No chemicals. Each of our goodies has a similar stellar pedigree: our coconut cake uses freshly-ground coconut, for example; my Mom’s original Death By Chocolate Cake boasts a special blend of three premium chocolates; our sandwiches contain real ham, not some slab of tasteless heat-pressed pig byproducts; our cheese comes from cows, not oil and milk solids. It took six months to perfect our New York bagel recipe; not quite H&H, but close. Our English Muffins rival Wolferman’s in Kansas City. Our croissants – the best on the island – are made with French butter and flour, because they bake better. And on and on. We now supply several five-star hotels and restaurants, as well as upscale coffee shops, villa management companies, tour companies, and our own Sandwich Shoppes. If you’ve notice that the food at certain Phuket Airport shops has improved recently, well, we’re behind that, too.

Thanks for all the "Likes"!

Sandwich Shoppe Chalong will be closed this coming Monday. We're putting a one-third-height brick wall along the back. That's phase 1. In phase 2, we'll put sound-absorbing panels on top - which should cut down on the echo and reverberating noise very substantially.

I'm still looking for a way to use the back room in that shop - the meeting room. Any suggestions???

The Sunday morning informal computer clinics are still going strong - this from last Sunday, at the Sandwich Shoppe in Chalong.

Several of you have asked when we'll get the old mega-clinics back. I'm about three weeks away from finishing the book (looks like it'll hit 1,050 pages, by far the largest book I've ever written). Once that's over, I'm going to take a few days off, and then I'll start looking for a venue...

Ay yay yay! We ran out of peanut butter again.

Really sorry about that. Went back to our supplier, and they've run out of jars. We've found new jars, but they're a different shape, so we had to have new labels printed.

While we're at it, we're going to get foil tops to heat-seal the PB and keep it fresher longer. And the new labels won't pick up the oil from the PB, so they won't get stained as easily.

That's one big disadvantage to real old-fashioned peanut butter: the oil separates and you have to stir it back in. At least it beats all the chemicals and weird emulsifiers the manufacturers put in mainstream peanut butters, to keep the oil inside.

The peanut butter's here in Phuket, still great, sitting in a fridge, waiting for us to get the distribution act together. It'll happen soon.

Sandwich Shoppe Chalong is now officially relocated. (In other words, we got the internet hooked up this afternoon.) Everything seems to be working. It's a bit Spartan - no signage, nothing on the walls, still need curtains and some lights - but I really like the open, airy feeling.

Day 1 of the move at Sandwich Shoppe Chalong is behind us, and we have the big stuff moved over. One of the air conditioners isn't working, and MAN the sunlight is bright!

We'll be closed again tomorrow, Friday, but I've been assured that we'll be open on Saturday. A few things might not be working right, but the coffee machine is calibrated and the staff's raring to go.

I had an interesting discussion with several people about how we're furnishing and decorating this shop (and the others, as well). I've been told that I should mimic other shops and go with chrome and glass and "modern" chairs - which are actually made of spun and wrapped plastic, designed to look like wicker, usually strung on a resin or tubular metal frame. Humbug.

I like leather and wood and soft fabric. The new shop has even more leather and wood and soft fabric - and a couple of nice antiques, to boot. We'll also have a big fish tank separating the sections of the shop. My kind of place. It ain't cool. It ain't trendy. But it sure is comfortable...

We just got the electricity hooked up at the new shop, around the corner from our current shop in Chalong. Currently expecting to make the move before the 15th. We're expanding the menu, bringing on a full-time chef, and adding all sorts of new stuff at the same time. Stay tuned!
