Sugo all'amatriciana (Italian pronunciation: [ˈsuːɡo allamatriˈtʃaːna]) or alla matriciana (in Romanesco dialect) is a traditional Italian pasta sauce based on guanciale (cured pork cheek), pecorino cheese, and tomato.
