這就是 sobremesa

・鮮蝦、蝦膏與爽脆蔬菜的海味鮮甜
-》搭配 Fermentación Lenta 2023 明亮的酸度，第一口就讓味蕾完全醒來。

・煙燻醋漬鮪魚的酸香俐落
・墨汁酥炸小卷的鹹脆濃郁
- 》讓晚收 PX 的果感更多層次，立體迷人。

・野菇、西班牙火腿脆片和烤大蒜的旨味爆棚
-》各種梅納反應帶出的韻味與旨味在口中層層堆疊，搭配Old Harvest 半甜雪利酒交織出焦糖與烘烤堅果般的圓潤尾韻。

・改良版西班牙國民美食香腸Migas炒麵包
-》兩道經典鹹食搭配清爽的PX Delicado 2023 甜酒，花果香與鮮鹹旨味交織出完美的味覺五角星，真的不能錯過的「絕美平衡」。

Some dinners end with dessert
Some nights begin after the plates are cleared

That moment is called sobremesa.

・Shrimp, bisque and fresh vegetables
-> lifted by the crisp acidity of Fermentación Lenta 2023, a bright and refreshing start.

・Tangy Tuna Escabeche
・Crispy Baby Squid in Jarana Ink Sauce
-> bringing out the dried-fruit and roasted aroma of this off dry style PX wine.

・Umami Bomb of mushrooms, Serrano ham and Garlic mash
-> with a Off Sweet Style PX emphasizing its caramel and toasted nuts aromas.

・Duck rice with foie gras and morel mushroom
・Smoky Chocolate Pork Cheek Stew

當你以為 Pedro Ximénez 只能是甜酒，
我們直接用六種風味，重新定義餐酒搭配。

一場西班牙風土 × 鹹食料理 × PX 極致演繹的味覺旅程。

本次餐會用酒：

1. Ximénez-Spínola Fermentación Lenta 2023

以 100% Pedro Ximénez 釀造的乾型白酒，採用低溫、緩慢發酵（Fermentación Lenta），完整保留葡萄的天然芳香。香氣細緻，帶有白花、青蘋果、梨子與淡淡草本氣息，口感純淨爽朗，顛覆 PX 一貫甜酒印象。

2. Ximénez-Spínola Exceptional Harvest 2023

精選年份限量釀造，完全展現 PX 葡萄在高成熟度下的天然甜美與平衡，香氣集中，帶有成熟白果、蜂蜜、杏桃與淡淡花香。入口圓潤，甜而不膩，酸度優雅，口感細緻。

3. Ximénez-Spínola Old Harvest

以較長時間風乾葡萄（asoleo）並延後採收所釀造的半甜酒。香氣層次豐富，展現葡萄乾、無花果、焦糖與堅果風味。口感深邃、酒體厚實。帶有葡萄乾與焦糖氣息，豐厚迷人。

4. Ximénez-Spínola PX Delicado 2023

風格較為輕盈、優雅的 PX甜酒，保留清新感與細緻結構。香氣以熟成白果、蜂蜜、橙皮與淡淡花香為主。入口柔順，甜度溫和、口感細膩，適合初次接觸 PX 甜酒的飲者。

5. Ximénez-Spínola PX Muy Viejo

PX Muy Viejo 為極高年份熟成的頂級 Pedro Ximénez 甜酒，展現時間淬鍊後的深度與複雜性。香氣濃縮而深沉，包含葡萄乾、黑糖、咖啡、可可與煙燻木質調性。口感極為濃稠、層次豐富，餘韻悠長，標準收藏級酒款。

6. Ximénez-Spínola Brandy Diez Mil Botellas

這款限量白蘭地以 Pedro Ximénez 葡萄蒸餾而成，並於栗木桶中長時間熟成，產量極少。香氣複雜，融合乾果、香草、焦糖、烘烤橡木與淡淡可可氣息。入口溫潤順滑，酒體圓滿，尾韻悠長且平衡。
