PORK Empanada Recipe ❤️
Yields: 38 - 40 pcs
For the Filling:
600 g ground pork (chicken or beef)
1 medium carrot diced
1/4 cup green peas(optiona)
2 tbsps raisins
1 medium potato diced
1 small onion finely chopped
4 cloves garlic minced
2 tbsps soy sauce or oyster sauce
3 tbsps catsup
2 tsp sugar
salt and pepper to taste
Seasoning
cooking oil
For dough or pastry :
600g all purpose flour
220g shortening or cold butter
1 tsp sugar
1/2 tsp salt
200 to 220ml cold water
For egg wash:
1 egg beaten
3 tbsps fresh milk OR Evap
For filling:
heat oil in a pan saute onion and garlic until fragrant. Then add the minced pork,season with little salt and pepper. Saute nicely until brown.add 1/2 cup water cover and cook for 10 minutes. Add the potatoes and carrots. Add soy sauce and catsup . Lastly add bell pepper and raisins adjust the taste.
(Add 2 tsp sugar).
For dough:
In a mixing bowl, combine flour,salt and sugar Add the shortening or butter and mix using fork or finger tips until pea size like.
Pour the water into the flour mixture little by little and mix together using your hands until the mixture turns like ball shape /dough . No need to knead the dough ,just cover the dough with plastic wrap rest for 30 minutes.
(After 30 minutes)
Make a golf ball -sized pieces. On a lightly floured work surface Use a rolling pin to roll each ball until it’s about 1/8 inch thick and 4 to 5 inches diameter(circle)
Use empanada molder or Use a wide-mouth bowl as a pattern for a nice round shape about 4 inch diameter. Cut off the extra edges using a pizza cuter or knife.
Scoop a spoonful of the filling and place it into the center of the dough be sure not overfill your empanada as you assemble to prevent any holes or tears in the dough . To prevent them from bursting open as they bake.
Brush the inside circle (edges )with egg wash. Fold over the dough to create a half moon shape and press the edges firmly to seal .then seal the edges by using a fork or by twisting the edges.
Deep fry the empanadas ,fry in batches , cook until nice and golden brown .drain the excess oil
NOTE: if you will bake it or cook it in the oven
Place them on a baking tray with a baking sheet or grease the tray .brush the empanada with an egg wash . Bake in a preheated oven at 375 degrees for at least 20 -25 minutes or until crust is light brown.
