🚨🚨🚨Well Hello all!!🚨🚨🚨 Happy holidays!
I just wanted to make a post and catch up on a few things! Since the dust has settled since I closed, I thought I could give everyone a heads up onto where Gringo's is headed!
First off, I have to thank everyone. The amount of support I received for the personal reasons on the closure of my physical location were so overwhelmingly positive and supportive, I knew I had to get back on track asap.
Some of you may have seen me at Michaels Meats! I was a butcher for 14 years prior to my restaurant/bbq endeavour. Michaels is owned and operated by my Uncle, so it is a family business and I decided to jump back in and butcher to help our family business and reevaluate Gringo's BBQ. But I didn't leave the restaurant without a plan! I decided to reopen operations from a food truck standpoint, I have obtained a food truck and will be in the parking lot of Michael's Meats & Seafood! We're taking my business and my Uncle's and putting them in one spot at one location. 906 E. Wishkah St. Aberdeen, WA. 98550
The food truck will have many benefits for me all the while still delivering Gringo's BBQ to the community. A more manageable menu, higher quality BBQ, a rotating menu, more scratch ingredients, better sourced meats and overall better operations.
Since the day I closed I never stopped cooking behind the scenes, always practicing, smoking, new sauces & sides. Obsessing and figuring out ways to perfect this craft of BBQ. I can't wait to show you all why Gringo's is the best from a different setting. I will be available on door dash again as well- at the time of reopening. Aiming for a spring reopening as I have to re jump through some hoops again, the health department, all that fun stuff. Please be patient with me there.
Can't wait to serve you all again, it was a pleasure before and this time will be even better, thank you all so much from the bottom of my heart.

A friend of mine Phil and his wife (Who previously owned Oak Burger in Oakville, WA have taken occupancy at my old restaurant. His restaurant is called Smokin Philly's! Definitely show him some love and check it out, he'll be open this Thursday! 12/17/25 Grand opening!
