Our folks were some of the many Hungarians who fought for freedom from Communism. The people of Hungary received no promised help from the UN or US, and their victory was short-lived.

You'd be hard-pressed to find anyone more patriotic than Joseph Novak. He and Mama were so thankful to be in America, where "Hard Work and Faith" provided incredible opportunities they could never have imagined when they fled their homeland. These are some of the many photos you'll find in the soon to be available update of their story: "Hard Work and Faith, the Journey of Joseph and Matilda Novak."

Remembering our beloved Papa Joseph Novak on the day of his birth, June 4th (1935). He touched so many lives! We are forever blessed.

On April 25th, 1984, "Novak's Hungarian Paprikas" opened for business in the Santiam Hwy location we occupied for our first 19 years. With hard work, faith and amazing food, Mama, Papa and Karen created a place where beautiful, delicious, heart-warming memories were made for nearly 40 years!

Note: The manuscript for "Hard Work and Faith, the Journey of Joseph and Matilda Novak" is completed. The book is still "under construction". We'll keep you posted.

In working on the book update, we’ve learned some things about our father’s work-life that we never knew before:

“I had worked there [a paper-box manufacturing plant] for about six months when one day, the owner called me in and asked me to be the manager of the company.

There, I developed a new process for recycling cardboard that was printed on one side and was going to be dumped. We started making inexpensive boxes with the printed side facing in, for people who didn’t care if it was pretty on the inside. I sold those boxes by the ton, and it was very profitable.”

The original storybook was produced at a time when we were in our Heritage Way location (which seated 120). The restaurant was open seven days a week, for breakfast, lunch, dinner, and Sunday Brunch. There just wasn’t much time to go through photos and newspaper articles. The updated version of their story will have at least four times that many!
