James Tearoom delights guests with its sumptuous three-course traditional Afternoon Tea experience in an elegant parlour setting. Group dining events for 2 to 100; birthdays, showers, anniversaries, business meetings are all welcome. The tearoom is located at the southwest corner of Edith and Osuna. “Wonder is the rapt attention and deep emotion caused by something extraordinary.”

When we were children, wonder came to us quite naturally. We found it in stories, moonlight, make-believe, the heavens above us, and the simple pleasure of being surprised by beauty.

But childlike wonder is not only for children. It is something worth protecting, something worth making room for, especially in an age so often marked by hurry and cynicism.

Some recipes are worth keeping close at hand.

Charleston Green Iced Tea with Brown Sugar Simple Syrup is a graceful balance of warmth and surprise. This verdant green tea, kissed with walnut and almond, opens with soft, toasty notes before unfolding into a delicate finish of tropical sweetness. Chilled and gently sweetened with brown sugar syrup, it becomes a refreshingly refined glass of southern charm.

Charleston Green Iced Tea with Brown Sugar Simple Syrup
Prep Time: 25 minutes + cooling and chilling
Serves approximately 4

Ingredients
3 heaping Tbsp. Charleston Green loose leaf tea
64 oz. boiling water, or filtered room temperature water for cold brew
1 cup water
1 cup brown sugar, or coconut sugar

Instructions: Brew Charleston Green tea in simmering water according to the steep time on the package. Let the tea cool completely on the counter before chilling in the refrigerator.

For the cold brew method, place the loose leaf tea in an infuser or directly into filtered water in a pitcher or container. Chill in the refrigerator overnight. The next morning, remove the infuser or strain the tea leaves.

To make the brown sugar simple syrup, heat 1 cup water in a small saucepan until boiling. Once it reaches a boil, turn off the heat and stir in 1 cup brown sugar, or coconut sugar, until fully dissolved.

Let the syrup cool completely on the counter before serving or chilling in the refrigerator.

Serve the tea with simple syrup on the side so each guest may sweeten their glass to taste.

St. James Iced Tea Secret: To keep your iced tea from becoming watered down, make your ice cubes from the same tea you are serving. Brew extra Charleston Green at least one night before, let it cool, pour it into ice cube trays, and freeze until ready to serve.

Pour over tea ice cubes, add brown sugar simple syrup as desired, and enjoy a summer glass that stays flavorful to the last sip.
