TWO New Ethiopias!

Gutity Natural:Gutity Natural is a fruity, floral coffee from Yirgacheffe, produced at the Gutity Washing Station. Approximately 600 small-holder farmers deliver Kurume variety cherries from farms situated 2,200 meters above sea level.

Upon arrival at the station, cherries are sorted in water to remove floaters, then sun-dried on burlap-covered raised wooden beds for 14–20 days with frequent movement to ensure even drying.

Managed by Snap Specialty Coffee, the Gutity station supports over 6,000 regional farmers by providing training in nursery management, production, and processing, along with free or low-cost inputs—including fertilizers and pesticides—to protect farm profitability and elevate coffee quality.

Guji Uraga: In Ethiopia’s high-altitude Guji region, the dense mountainous forest of Uraga houses Yabitu Koba. Local producers deliver harvested coffee cherries to Koba’s processing center, where they undergo 48–60 hours of cement-tank fermentation followed by 7–8 days of drying on raised beds.

Koba’s farmers grow their coffee in highly fertile, self-sufficient sandy loam soil that requires no fertilizer. To provide optimal shade tailored to plant age, they intercrop with maize, false banana, Korch, Wanza, and Sesa trees.

Part of the Oromo people, these farmers speak Oromiffa and lead a quiet lifestyle centered on traditional agriculture. Honored by the specialty coffee world for their ancestral wisdom and dedication, they continue to cultivate exceptional coffee in its native forest origin.

About Ethiopia Chelbesa Danche Anaerobic Washed

Yirgacheffe produces some of the world's more elegant and refined coffees with effervescent aromas and flavors. It comes natural here for coffee producers, making coffee producers in other countries jealous at how effortless these coffees come about. The climate is just right, the soil is perfect, and the culture has maintained the coffee history generation after generation. In fact, the locals roast and brew their own coffee, a rarity in the coffee growing regions. It is in their blood here.

Smallholder farmers deliver their cherries to the washing station in Chelbessa for processing. For the Anaerobic Washed lot, only the ripest of cherries are selected, hand-sorted and floated to remove all defects. Cherries are then de-pulped and left in sealed tanks to ferment for 48 hours, without the presence of oxygen (anaerobic). After fermentation, the parchment is washed twice with clean water before being laid to dry on raised beds for 15 to 20 days, depending on the weather.

SNAP operates 7 washing stations in key coffee-producing areas like Sidama, Yirgacheffe, and the Guji Zone. SNAP focuses its operation on three fundamental pillars – Consistency, Education, and Sustainability. It is within their purpose to improve the livelihood of supporting farmers, and last year their team of agronomists trained more than 6,000 farmers in land and nursery management, and climate-smart agriculture through crop diversification and intercropping.

Hacienda Rio Negro has made environmental stewardship a central part of its coffee production. The farm is a whopping 1,813 acres; this includes 815 acres of protected natural forest and more than 90 acres dedicated to reforestation. Amongst the coffee trees, extensive plantings of native shade trees provide habitat and help regulate temperature and water. Located beside La Amistad National Park, the farm’s conservation efforts help protect the surrounding ecosystem. Rio Negro was also the first farm in Costa Rica to receive Rainforest Alliance certification in 2001. Sustainable practices include annual soil testing to minimize fertilizer use, terraced coffee fields and drainage systems to reduce erosion, and a hydroelectric generator that powers the coffee mill. The mill also uses coffee parchment as biomass fuel, reducing the need for wood.

The farm also plays an important role in supporting its workers and the surrounding community. Hacienda Rio Negro employs about 50 full-time workers and provides housing, clean spring water, financial assistance, savings programs, and access to low-cost loans. Workers and their families have access to an on-site medical clinic with a doctor and dentist, as well as a daycare for children. The farm supports the local school by providing supplies and uniforms for workers’ children. Together, these efforts make Rio Negro not only a coffee-producing operation but a force for positive impact.
