It’s PROBABLY Summer!

It’s time, Eagle River. The month we’ve all been waiting for is finally here.

Tuesday at NOON, the deck officially opens!

I spent today pressure washing, cleaning things up, and adding a little color. The entire staff is looking forward to working outside, soaking up some sunshine, and pretending this weather is going to last more than 48 hours.

They’re already planning their deck uniforms. Expect sunglasses, jorts, and probably socks with sandals. It’s Gen Z. I’ve stopped asking questions.

Happy Friday!

Fresh Alaskan Halibut is back on the menu, wine poached and finished with our house beurre blanc over asparagus risotto.

We're also bringing back the Champion's Cut, our award winning Certified Angus Beef bavette steak. This is the dish that won the Certified Angus Beef Chef Challenge!

If you're trying to decide between fresh Alaska seafood and award winning beef tonight... well, that's a pretty good problem to have.

It’s Pour Decisions Thursday and we’re taking a tour of Italy tonight.

We’re starting high in the Alps with a unique cooperative growing region in Alto Adige making mountain Chardonnay that tastes nothing like the buttery California style most people expect.

Then we head all the way down to sunny Sicily for Nero d’Avola, a rich southern Italian red packed with dark fruit and spice.

After that, we move into Tuscany with one of the most respected producers of Vino Nobile di Montepulciano, a complete nerdy sommelier wine.

And finally, we finish in Piedmont with Nebbiolo from the Barolo region. Earthy and balanced, and the kind of wine that turns people into full blown Italian wine nerds after one glass.

Tonight at Corks & Hops we’re featuring Fresh Alaskan Halibut because summer in Alaska just feels wrong without it on the table.

We’re also running a new Chicken Burrata special with breaded chicken breast topped with creamy burrata and balsamic reduction, served with house made mashed potatoes and fresh Alaskan carrots. Comfort food, but dressed up a little.

And don’t forget our Beer vs Wine Dinner on June 4th.

IT’S POUR DECISIONS TIME!

We’re skipping right past that fish situation and getting to what really matters, YOU helping us pick our next Malbec by the glass!

This week we’re pouring four incredible expressions of the world’s most dramatic grape, and we need your votes!

Tamari — Argentina brings the bold, with ripe dark fruit, tannins, and a concentrated finish

Gascon — A Mendoza classic. Think jammy and smooth.

Browne Family Vineyards — Walla Walla, Washington puts its stamp on Malbec from the US.

Gérard Bertrand “An 1152” Cahors. The OG. France’s original "black wine" which is normally relegated to a blending grape, but now it's in full force.

We need to make a correction regarding tonight’s Copper River Salmon feature.

We ordered what was represented to us as fresh Copper River Red Salmon from our supplier. After service, we discovered the product we received was actually refreshed Copper River salmon from last season.

That distinction matters to us, because we pride ourselves on not serving previously frozen fish.

We served it believing it was fresh Copper River salmon, and we apologize for the mistake and for not catching it before service. If you had the special tonight, come talk to Jason or Ashley for a refund of your entrée.

We take a lot of pride in being transparent about our ingredients and sourcing, especially with Alaskan seafood.

We are addressing the issue directly with our supplier and will make sure this does not happen again.

Happy Wednesday!

Chef Adrian is back with his Breaded Chicken Penne Pasta tossed with fresh house pesto, and yes… people have already been asking about it since last Wednesday.

We’re also officially entering Alaska “summer,” meaning the fish is back in full force. Fresh Copper River Red Salmon and Alaska Halibut are both on the menu starting tonight.

And before the locals say it… yes, we know your freezer is already packed with salmon. But we’ve got a lot of visitors in town experiencing Alaska for the first time, and we’re pretty sure they didn’t fly all the way here for frozen fish.

Trivia Tuesday is HERE!

You’ve been anxiously waiting all week for Ashlyn to throw beads at you while aggressively judging your answers, and it's time!

We’ve got the ONLY Certified Angus Beef burgers in town made with hand ground Tenderloin and Ribeye, because frozen hockey pucks should never be served in a restaurant.

Also:
Our new potato wedges tossed in Pecorino have arrived, and they're a huge upgrade.

And since we’re doing Prime Rib on Sundays, that means one very important thing:
