Starting off a new tradition to recognize the students who bring passion, skill, and creativity to our culinary program each day! This week Bryce Glidden is our student spotlight, she is someone her classmates can always count on, and she brings great energy to the kitchen! Go Bryce!

Zeynep .alaska was kind enough to invite me to experience what is now my new breakfast obsession, a gorgeously prepared Turkish family-style spread. There was a basket of assorted freshly baked breads (the börek was my favorite), many little dishes of spreads, condiments, and little surprises (like a Turkish candied eggplant!), and impeccably cooked eggs - the poached eggs with garlic yogurt is a standout. Besides being perfect for sharing, which is my favorite way to dine, this food also comes with personal and cultural narrative. Pre-restaurants, Zeynep was a profesor of sociology at UAA and I love hearing her talk about everything from sourcing hard-to-find ingredients to differences in pronunciation to the provenance of certain dishes. It’s a privilege to be able to sit at a table like this and I’m already trying to wrangle an invite to Zeynep’s next trip to Turkey.

Congratulations to our very own Chef Kellie Puff and Director of Academic Advising Whitney Flores! These two rockstars received their Masters of Science in Project Management today and we couldn’t be prouder. 👏🏽🎉🥳🍾

Today was deep cleaning day for the kitchen, bakery, and restaurant, and while that meant a lot of scrubbing, organizing, and polishing, it also meant that Chef Noah had to bust out the prosciutto leg he’s been aging for a year in our fancy-pants dry aging cabinet (generously donated by the Cuddy family). Interested in seeing how this is done? Stay tuned for details on our butchery class in the fall!

The last day of service at Lucy’s is always bittersweet but these students are ready for the next chapter (and a restful summer in between)! Thank you to our incredibly supportive community and all of the guests who make this educational laboratory possible. For those of you who wonder how the restaurant and bakery tips are used, we utilize those funds to give the students a fine dining experience of their own, so that they can learn from local professionals what excellent hospitality looks like from the guest’s perspective. We are grateful for your generosity!

What is Lucy’s? We are a Culinary Arts program that utilizes a Bakery Cart and Lucy’s Restaurant as training tools and labs for our future chefs and bakers. The first half of the semester is the Bakery Cart. The second half of the semester is Lucy’s. We frequently post about openings and availability on our social media so this is the best place to find up-to-date information. Scroll through previous posts to get an understanding of how we operate. Our hours are limited because these are lab classes and run on a class schedule. Do you have someone you’re sweet on or a sweet tooth yourself? Chef Puff and the bakery students made high-quality, artisanal dark Belgian chocolate Easter bunnies and they are eggs-pecially cute! Come by Lucy’s to pick one - or three! - out for chocolate ear decimation.
