Apollon Restaurant Former owner Stavros Kodis was born and raised in Greece. In 1984 he opened his first restaurant, Bij De Griek, and operated it until the end of 1993.

Since opening in 1994, Apollon has been one of Appleton Wisconsin’s leading restaurants, applauded for its gracious service and Mediterranean take on fine dining. During that time he met his wife Jan, native of Appleton. In 1994 he moved to the Fox Valley. The Apollon has since become a staple in the Fox Valley. Chef Kodis taught and trained the entire staff, his legacy carries on to this day.
