Picarones, or Peruvian donuts, are a dessert that originated in Lima, Peru over 200 years ago during the Spanish Viceroyalty. They are based on the Spanish buñuelo, a fried dough ball, but enslaved African cooks modified the recipe to use Peruvian sweet potato and squash. The recipe was then passed down through generations, especially among Afro-descendant families, and became an integral part of Afro-Peruvian culture.
