This weekend’s special: Beef Caldereta and Buko Pandan (Coconut Pandan)

Beef Caldereta is a rich, slow-cooked stew made with tender beef, liver, tomatoes, bell peppers, potatoes, and a deeply savory sauce layered with bold, hearty flavors. Traditionally simmered for hours to develop its signature depth and richness, it’s a dish that showcases the comforting soul of Filipino home cooking.

This weekend, we’re serving our traditional take on this classic in celebration of Chef recent win on Top Chef, where she proudly showcased Caldereta as her final dish. We’re proud to see Filipino cuisine receive the recognition it deserves and hope it inspires more people to explore the stories, traditions, and flavors behind these dishes.

For dessert, we’ll have Buko Pandan, a refreshing Filipino dessert made with young coconut, pandan-flavored jelly, tapioca pearls, and a lightly sweet cream. Cool, fragrant, and perfectly chilled, it’s the perfect way to finish a hearty meal.

BISTEK TAGALOG THIS WEEKEND!
Think of it as the Filipino version of beef steak.

Thinly sliced beef marinated in soy sauce and calamansi, then slowly simmered until tender and topped with sweet onions.

Savory, tangy, and perfect with a big scoop of rice.

A little fun fact:
“Bistek” comes from the Spanish word bistec (beef steak), while “Tagalog” refers to the language and to the region of where this classic dish originated.

There was a lot of confidence at the start, followed by confusion, random guessing, and a little bit of panic. Somehow, we connected the clues and made it out!

We’re still reflecting on what a special day it was. ❤️

Thank you to everyone who came out to celebrate AAPI Heritage Month with us.

Thank you to for bringing this event together, to all of the talented artists who shared their work, to Zillicoah Beer Co. for providing the space, and to for the work they do to support our community.

A special thank you to for trusting us. We were honored to share a family recipe and a piece of your story. And to everyone who lined up right at noon, thank you. We sold out of our Korean Galbi special in about 90 minutes, which completely exceeded our expectations. We may just have to do this again, with a lot more prepared next time.

Lastly, thank you to our power team. Between two caterings, the collaboration special, the AAPI celebration, and regular truck service, you showed up, worked hard, and made it all happen.

We’re grateful, humbled, and we’re already looking forward to the next one.

This Saturday, we’re bringing you a very special collaboration in celebration of AAPI Heritage Month.

We’re incredibly honored to finally collaborate with Kim’s Asian Market, a longtime pillar of Asheville’s Asian community since the 1980s. For decades, Kim’s has connected people to Asian flavors and heritage. Asian markets like Kim’s are more than just grocery stores , they become gathering places, cultural bridges, and a way for families to stay connected to traditions, memories, and the food they grew up with. Today, Daniel Yang proudly carries on that legacy as the second generation helping lead the business.

Together, we’ll be sharing traditional Korean Galbi, made from a recipe passed down through Daniel Yang’s family for generations.

For one day only, starting at 12 PM until sold out, we’ll be serving Galbi, marinated short ribs grilled with that rich balance of sweet, savory, and umami flavors that make it one of Korea’s most beloved dishes. Each plate will be served with rice and banchan (sides) such as mandu, pickled radish, and kimchi.

As part of this event, a portion of our sales will be donated to to support their community mutual aid program.

From 3–8 PM, enjoy local art and music from Caravan Art Bazaar artists as we celebrate community, culture, and creativity together.

Huge thank you to Zillicoah Beer Company for graciously hosting this gathering and always creating space for culture and community to thrive.

This special will be exclusive to this event only, and once sold out, it’s gone, so we highly recommend coming early.

Today’s a big day for both our partner breweries.

Over at Zillicoah Beer Co., it’s the main day of the “This Boat Will Float” weekend-long celebration
and at RAD Brewing Co., we’re celebrating the brewery’s 3rd anniversary.

We’re expecting larger crowds today, and while we’ll do everything we can to keep the food moving out as smoothly as possible, there may be a little extra wait during peak hours. We truly appreciate everyone’s patience, kindness, and support toward our small team.

Days like this remind us how special this community really is, good beer, good food, familiar faces, and people coming together to celebrate something local.

This weekend feels extra special for us. A whole lot happening, a whole lot to celebrate, and we’re just really grateful to be part of it all.

At Zillicoah Beer Company we’re celebrating THIS BOAT WILL FLOAT, a weekend-long gathering centered around resilience, community, and the people behind Asheville’s beer scene. Breweries supporting breweries, people showing up for people. After everything our community has been through, it feels meaningful to gather again around food, beer, and familiar faces. Fri to Sun, 5/15-5/17

On Friday, we’re also welcoming the parents and faculty of Asheville Catholic School at Zillicoah for a dine-out fundraiser supporting the school and its causes.

And Saturday, we celebrate 3 years of our friends at The River Arts District Brewing Company. 🍻

It’s a jam-packed weekend in the best way possible, right in the middle of Asheville Beer Week 2026 (May 16–29), and we’re excited to feed everyone coming through.

Ube love is deep and real.

We just wanted to say thank you for such an amazing start to the month. You all have been selling us out of our Suman Ube and baked goods week after week, and we’re truly grateful for the continued support you show our little trucks.

Suman Ube will be back on Wednesday, and goodies will return on Thursday.

In the meantime, our Calamansi Sunshine Bar will keep shining through the rest of the month, and Banana Turon is also available.

And to all the moms, lolas, titas, mother figures, fur moms, and nurturing souls in our community, Happy Mother’s Day. Thank you for the love, strength, and care you pour into the people around you every single day. We hope you feel celebrated today.

Beef Caldereta, a slow-simmered Filipino beef stew with tomatoes, potatoes, bell peppers, and olives. Rich, savory, and cooked low and slow.

Making its return this weekend, Chicken BBQ with Peanut Sauce. Filipino-style grilled boneless chicken thighs from , paired with our peanut sauce, simple, comforting, and really good. Served with atchara (pickled papaya) on the side for that bright, tangy bite.

This weekend, we’re featuring a special off-menu favorite, our Vegan Pancit Bihon.

Usually a catering-only dish, but we wanted to share it with you here at the truck. A lot of you have been asking for more vegetarian options, and we’ve been working on it.

This one is both vegan and gluten-free. Sautéed rice noodles with cabbage, celery, carrots, tofu, and green beans. You can grab it as a full order or as a side.

And for dessert… it’s finally back.
Buco Pandan is making a return after a long break (coconut supply had us waiting on this one). Available this Sat & Sun (April 25-26) or until it sells out.
