🦀 Maryland Crab Cakes

Makes 6 large crab cakes

INGREDIENTS

* 1 large egg
* 1/4 cup mayonnaise
* 1 tablespoon chopped fresh parsley (or 2 teaspoons dried)
* 2 teaspoons Dijon mustard
* 2 teaspoons Worcestershire sauce
* 1 teaspoon Old Bay seasoning (up to 1 1/2 teaspoons for a spicier kick)
* 1 teaspoon fresh lemon juice, plus more for serving
* 1/8 teaspoon salt
* 1 pound fresh lump crab meat
* 2/3 cup saltine cracker crumbs (about 17–18 crackers)
* Optional: 2 tablespoons melted butter, salted or unsalted

INSTRUCTIONS

1. In a large bowl, whisk together the egg, mayonnaise, parsley, Dijon mustard, Worcestershire sauce, Old Bay seasoning, lemon juice, and salt.
2. Add the crab meat, followed by the cracker crumbs. Using a silicone spatula or large spoon, gently fold everything together, being careful not to break up the crab meat.
3. Cover tightly and refrigerate for at least 30 minutes or up to 1 day.
4. Preheat oven to 450°F. Generously grease a rimmed baking sheet with butter or nonstick spray, or line with a silicone baking mat.
5. Using a 1/2-cup measuring cup, portion the crab cake mixture into 6 mounds on the baking sheet. Do not flatten! Gently compact each mound so the crab cakes hold together. For extra flavor, brush the tops with melted butter.
6. Bake for 12–14 minutes, or until lightly browned around the edges and on top.
7. Drizzle with fresh lemon juice and serve warm!

2 ribeye or New York strip steaks (1–1½ inches thick)

1 tbsp avocado or olive oil

1 tsp kosher salt

½ tsp black pepper

½ tsp smoked paprika

1. Season the steaks

Pat the steaks completely dry with paper towels. Season both sides with salt, pepper, and smoked paprika.

2. Simmer Butter Cup & Co’s Cowboy Butter in a small saucepan over low heat.
3. Sear the steaks

Heat oil in a cast-iron skillet over medium-high heat. Sear steaks about 3–5 minutes per side depending on thickness, using a thermometer to check doneness.

4. Add the cowboy butter

Reduce heat to low and spoon 2–3 tablespoons of cowboy butter over the steaks. Baste briefly, then remove from the skillet.

5. Rest and serve

Rest the steaks for 5–10 minutes, slice against the grain, and drizzle with the remaining warm cowboy butter.

Serve with Redstone’s Mashed Potatoes and Gravy and a Redstone Kale Salad!
