Our machacado is right now sourced from Paras, Nuevo León, un pueblito in northern México where my maternal grandparents are from. It’s made the traditional artisanal way, and every bite takes me right back to my childhood.
Growing up, one of my many favorite breakfasts was machacado con huevo a la mexicana, a classic from the Nuevo León region. This is our torta version of that beloved breakfast, en un bolillo tostado and made to order.
