Graciano Cruz isn't just a legendary producer. He's one of our favourite people in coffee.

Whether we're walking his farm, cupping his coffees, or catching up after hours, time spent with Graciano is always a highlight of the year. His energy is infectious, his ideas are endless, and there's never a dull moment.

When it came time to release his Los Lajones Bambu Geisha, we felt it deserved something more.

Last week Kirk Pearson and Jak Michael Ryan took over the bar with a menu packed full of banger coffees and bevvies. Kirk served espresso, filter, and a special flat white made with milk powder blended into local Texas milk to mimic the richer milk back home. It was absurdly good.

Jak served the geisha from Benjamin Paz that helped secure his U.S. Barista Championship win.

Earlier this year Jak found himself in Honduras on his first ever origin trip. Kicking things off, we hung out with the one and only Benjamin Paz at his award winning farm La Salsa.

Fresh off his win as the 2026 United States Barista Champion, Jak Michael Ryan will be joining Melbourne coffee legend Kirk Pearson behind the bar at Proud Mary Austin for a special one-day takeover.

Expect a small lineup of exceptional coffees, personally brewed and served by two people who have helped shape coffee culture on opposite sides of the world.
