Happy 250th birthday, America. ❤️🤍💙

There’s no better place to celebrate than downtown Bainbridge Island.

Kick things off with the Street Dance on Friday, swing by for the parade on Saturday, and don’t miss our Seattle Dog Pop-Up featuring Snake River Farms Wagyu beef dogs loaded with Martin’s buns, cream cheese, caramelized onions, sriracha, and furikake until sold out.

Kingfisher will be pouring bubbles, shucking oysters, and serving our seasonal menu Saturday from 12–4.

Then keep the long weekend rolling with brunch, lunch, and dinner at Café Hitchcock on Sunday.

Good food, good people, and one of the best weekends of the year. We can’t wait to celebrate 250 years with you, Bainbridge. 🇺🇸🍾🌭🦪

There’s no better place to celebrate than Bainbridge Island Downtown 🇺🇸

Kick things off with the Street Dance on Friday night, swing by for the parade on Saturday for our Seattle Dog Pop-Up featuring Snake River Farms Wagyu beef dogs loaded on a Martin’s bun with cream cheese, caramelized onions, sriracha, and furikake!

Brendan’s dedication to hospitality, foods of integrity, and building community through great meals is second to none. Whether he’s in the kitchen, at the farmers market, mentoring the next generation of chefs, or introducing someone to their new favorite record, he brings the same passion to everything he does.

You all loved these so much a few years ago we had to bring them back for round 2. Big enough for your farmers market haul, your current book stack, and yes, even a giant tin of potato chips for peak picnic season.

Foodie friends, our Hitchcock Weekly Meal Kits are here at the market at Bainbridge. Formerly our CSA, now reimagined for total flexibility. No subscriptions, no commitment, just really good food when you want it.

Every Saturday we drop a new, chef-built meal sourced from local fisheries, farmers, and purveyors. Shop it piece by piece or take it home as a complete kit, with simple guidance on how to cook it the Hitchcock way.

This week we’re leaning into deep umami with katsutake sablefish. Your kit could include a dashi starter with kombu, bonito flakes, and locally foraged shiitake mushrooms, paired with rice and fresh seasonal produce. At the center is a beautiful cut of marinated sablefish from our friends at Key City Fish Company in Port Townsend.

Sablefish, often called black cod, is prized for its rich fat content, silky texture, and forgiving nature in the pan. This preparation draws from Japanese kasuzuke traditions, where fish is marinated in sake lees, bringing natural sweetness and depth. Our version uses a miso and mirin-forward marinade with our own shio koji, creating that signature caramelization and layered flavor when cooked.

Find everything at the market at Cafe Hitchcock on Bainbridge Island from 8am to 4pm Saturday through Tuesday, while it lasts.
