π₯¦ππ§β¨ Slow Cooker Creamy Broccoli Cheddar Chicken Soup β tender shredded chicken and broccoli simmered in a rich, velvety, cheesy cream broth. Cozy, filling, and perfect for an easy family dinner!

π Youβll need:
* 2 lbs (900 g) boneless, skinless chicken breasts
* 4 cups broccoli florets, chopped
* 1 small onion, diced
* 3 cloves garlic, minced
* 4 cups (960 ml) chicken broth
* 1 tsp garlic powder
* 1 tsp onion powder
* Β½ tsp dried thyme
* Salt and black pepper, to taste
* 8 oz (225 g) cream cheese, softened and cubed
* 1Β½ cups (360 ml) heavy cream
* 2 cups (200 g) shredded sharp cheddar cheese
* 2 tbsp cornstarch + 2 tbsp cold water, optional for thickening
π©βπ³ Instructions:
1. Place the chicken breasts, broccoli, onion, garlic, chicken broth, garlic powder, onion powder, thyme, salt, and pepper in the slow cooker.
2. Cover and cook on LOW for 5β6 hours or HIGH for 3β4 hours, until the chicken is fully cooked and tender.
3. Remove the chicken, shred it with two forks, then return it to the slow cooker.
4. Add the cream cheese and heavy cream. Stir well, cover, and cook for another 20β30 minutes.
5. Add the shredded cheddar gradually, stirring until completely melted and creamy. Do not boil after adding the cheese, as high heat can make the sauce grainy.
6. For a thicker soup, stir in the cornstarch slurry and cook for another 10β15 minutes.
7. Serve hot with extra shredded cheddar on top.
