Cafe

Evolve Cafe and Chocolate has its home above Village Books, one of the largest independent bookstores in Washington. The cafe is renowned as a source for local and sustainable food and products, all while overlooking beautiful Bellingham. Their organic coffee is sourced from a local family who has been their supplier since day one. The tables where patrons laugh and dine are upcycled Douglas

fir from a 100-year-old Fairhaven house roof. Everything in the cafe has a story, from the food to the “writers corner” to the green living wall that infuses the air with extra oxygen. All menus are created by executive chef, co-owner Christy Fox and inspired by her wife Shannon’s musings. They’re a combination of customers' desire and what's fresh, local, and in season. To enhance the dining experience, Evolve offers a selection of regional wines along with curated wines and from around the world, a rotating list of craft beers, a list of house infused cocktails, and spiked hot chocolates and toddys.

Hey Friends! It’s so hard to believe that it is January 2025 🤭.
We have a few (temporary) changes that are starting on Wednesday the 8th. Beginning this Wednesday & Thursday for the month of January, our hot side of the kitchen will not be available. This is a temporary side effect. We will be open our normal hours, 9am-5pm with all our pastries, desserts, drinks & savory options coming from our cold case.
Undoubtedly, if you have been in to the cafe, you have seen Chef sporting one of her unique hats doing what she truly loves to do, creating delicious food surrounded by the super fun bunch that make up team Evolve.
During the next few weeks, we are supporting Chef while she recovers from the first of two hand surgeries to repair severe carpal tunnel syndrome. We could have chosen to hire a couple of folks quickly to replace her while she is out, but we decided to honor the staff along with chef by taking our time to look for the absolute right member to add to our dynamic team without pushing harder than is truly necessary. We are hopeful that you all will understand and thank you for supporting all that we do. We are aware that some folks will be quite disappointed the hot line will not be available on Wednesday & Thursday’s and for this we are truly sorry. There is great news though…time does fly by fast 😅. If you felt so inclined when you stop in, please give a shout out to our team and the two talented chefs behind Chef Christy - giving them a gregarious whoop whoop, would undoubtedly bring big smile’s all around 🙌.
Loving fact 🤭… Evolve has a very mighty staff of 14 + two active owners in our tiny space working from two ovens, 2 burners and world encompassing amount of passion serving several hundred people a day!!

One of our absolute favorite decisions we made when developing the cafe almost 7 years ago was that the wildly talented Jeremy & Megan Noet at would be apart of the daily service at Evolve. We started the business on the foundation of love and respect for one another & the utterly beautiful patina of Blue Water Pottery became an unknowing participant in our daily, very personal pact of sharing coffee in bed every morning. Our ritual to one another is about to celebrate 12 years of marriage and 15 years of drinking coffee from mugs made by Jeremy! Ah love 💕. We are beyond grateful for collaboration in creating the plates & many of the mugs through the years and the continued friendship. If you love the work of Blue Water Pottery, you can find them this Saturday & Sunday as a tour stop for along with , along with so, so many more gifted artists showing their pottery works of art all over Bellingham. Buying local is even more important this year, please help to contribute to our local economy with supporting local art! Cheers!

Many folks know that we source a substantial amount of our ingredients from our local farmers, ranchers & fisher folk. But I am thinking that it is unknown how far we dig into the depths of local purchasing when it comes to our beverage program. We are beyond fortunate to live in a diverse farming community and at Evolve we are blessed to have established many beautiful friendships including the one with our good friend Brian Rusk from . Brian is a force, he is the driving force behind in what I believe to be the future of farming. We are grateful for his years of work to understand how to cultivate the best ginger and turmeric I have ever had the pleasure to work with. These magical tubers are a large part of the flavor identity behind . Today, we are busy in the kitchen processing all of turmeric harvest for our signature Golden Fog drink. The Golden Fog is a warm, soulful sipper that uses Brian’s ginger & turmeric steeped with honey & organic coconut milk. Soon, we will begin packaging for you to enjoy at home!! We are very excited that Brian was able to have grown enough this year to not only sustain the restaurant for the year but also offer some packaged for folks to enjoy in the comfort of their own space. We are using for inspiration of Dia De Los Mu***os for this week’s special dinner menu. It will be available on Friday & Saturday beginning about 5pm. We have also added the ability to make reservations but we definitely welcome walk-ins to enjoy the three courses or to order a la carte from our special menu as well as our everyday offerings. Do you know what these beautiful flowers are? Sativus Crocus is the proper name otherwise known as the most expensive spice — Saffron! We are growing saffron y’all 🤭. Funny story…. Late summer my wife had to travel and was gone for a couple of weeks and she left me alone with my creative thoughts—most of the time it ends up with some new dish. My babe rocked it getting the necessary materials together to plant well over 75 saffron corms all the while managing the training of 6 new employees and all the other shenanigans we find ourselves in! I am sure I will post more on growing saffron and the harvesting of the threads. I am excited and can’t wait to create many tasty items from our own saffron in the kitchen with The Laughing Wives❤️.

Today I didn’t realize how much I needed to have this delicious Coconut Cream Tart. The 3 C’s…creamy, coconutty & comforting 🤭. It was made to be enjoyed with your favorite tea or coffee sitting inside where it is warm and cozy, away from the blustery days we are having. Guess What Chicken Butt 🤭. Starting this evening, Thursday 10/24 we are returning to our full service dinners Whoop whoop 🙌. It has been a long time, thanks Covid pandemic for the hiatus. We are proud to be able to offer this unique, locally curated food offering available Thursday-Saturdays beginning at 5pm. Also available now is the ability to request reservations on our website although we do still allow for walk-in’s. The menu will change every week, so keep an eye out for what’s on the menu on social media as well in our newsletter’s. Thank you to all those who have prompted us to return to the sweet end of the day with dinner & desserts.

I’m not one to usually talk about childhood memories on social media but you might catch me in the cafe explaining that every time I make apple pie I am reminded of one of my favorite memories. I make my Apple pies as big as I can because they remind me of Christmas and going to cut down our tree at a family farm in Northern California, while we waited for the tree to be tended to- the 3 generations of women in my family would watch in awe of the Mile High Apple Pie that was being sold at the farm. My grandmother & my mom swooning over the pies still inspire me to hopefully draw that same kind of excitement from the guests I am proud to serve in my own cafe. My favorite apple coming from …beginning Thursday until sold out for the last of the season Gravenstein apple pie.
Another one of the tremendous reasons why I love food, not just for the sustenance it provides but the true comfort that takes place for generations ❤️. What is your favorite food memory?
