Situated on the corner of Casual and Fine Dining, Popolo serves an elevated menu in a down-to-earth atmosphere at affordable prices. In winter the fireplace in the lobby is roaring on Friday and Saturday and in summer there's dinner on the deck overlooking America's first canal, a granite train tunnel, and the craggy mountains on the Connecticut River.

Yes. We're still closed. It appears like this will go on for a while. I encourage you to post thoughts on this page about how you're making the time go by. Keep them clean, please. Me, I'm cleaning incessantly, mostly at home. I think I'm actually messing things up just so I can do more cleaning.

I'm not going to bother with that line about "We are closely monitoring the progress of COVID-19" because, apparently, that's all we do. At some point, if people behave well, we'll get through this. Stay focused on that. If we start having to throw virtual parties and sell to-go cocktails just for something to do, I'll let you know. I miss the commonality and the sound of forks against plates. All the murmuring and children squealing and the nuances of having 50 or a 100 people in a room. There are things about the hospitality industry I thought I would never miss but, heck, bring em on! In short, you are all missed and I am hopeful that we'll whup this creepy virus and get back to the business of being human. Good luck to you all. Wash your hands. - Gary Smith, General Manager

Well, we were pretty sure that we'd be ready to open in early March but life is full of mid-course corrections. We hired a new chef, a new sous chef, and others and could not be happier about our exciting future.

Our plan is now to open at the end of March and we'll offer more info soon.

There will be all new menus and a crisp new direction and also a renewed sense of purpose, focusing on the bounty of Vermont and the wonder of food made from passion and mission.

Get ready, people. While we're away, visit the many great restaurants in the region. We'd like to help build a culture of dining in the area because we are blessed with great growers, brewers, vintners, cheesemakers, foragers and, yes, restaurateurs. And also the nicest people with whom you'll ever go to dinner. Oh, and spring is coming. Please stay tuned.

Sous Chef is responsible for management of cost control, inventory, ordering and supporting the chef. The best candidate will have a true love of cooking and leadership/management experience.
