​Roasting on our world-class new Diedrich roaster, our select beans are roasted dark, but to a perfect richness to preserve the flavors in our blends and single-origin coffees. We started about a year ago and have been practicing and attending roasting classes and seminars all the past year. The Diedrich IR 2.5 roaster was custom ordered from the factory - it does an amazing job and we love roasting on it.

I finally had to replace my 30 year old espresso machine, the Brasilia Portofino. It provided thousands of wonderful lattes, cappuccinos, and Americanos for decades. I bought it used 25 years ago. So this week I was over at Clive Coffee in Portland and picked up an ECM Synchonika. Plumbed it in yesterday and pulled shots this morning. With the double boiler action, the steaming is amazing. It's also very quiet. When the vane rotary pump in the Portofino came on, it could be heard anywhere in the house. First one up in the morning turned it on and the noise provided a nice wake up call anyone else still asleep. I'll miss the old machine - it certainly served us well for many years, but the Synchonika is a beautiful machine, incredibly well build, and I can already report that the espresso from it is amazing!
