Oh man, Cheesecake Thursday is DELICIOUS this week, with another new installation that's top ranking among our whole team!

Buttermilk Strawberry Shortcake Cheesecake brings to live everything you love about old style strawberry shortcake on a sweet biscuit soaked in delicious strawberry juice!

For this one, I modified my sweet scone recipe a bit and pressed it into the bottom of spring form pans. I parbaked them, them brushed them with some heavy cream and sugar before pouring in a batch of my buttermilk cheesecake batter. The texture and combo here of the biscuit like shortbread absolutely hits with the buttermilk tang of the cheesecake.

For the topping, I chopped up pounds and pounds of fresh strawberries and then used a portion of them to make a homemade strawberry sauce that I poured over the rest. We top each cheesecake slice as we serve it so the juices don't get to the shortbread until the cheesecake gets to you. It's all topped with a mound of whipped cream.

This is summer in all its glory! 🥰 And it's my apology for no cheesecake next week because I'm off to Jesus camp for the week to feed a bunch of college kids. I'll surprise you all with something yummy when I get back, so no voting this week.

This week at The Carlton Diner

It’s a big week as your favorite hostess turns 88 years young today! And it’s a big week for our family as we have 3 birthdays just this week!

So we have an all-week special to celebrate the 88 year milestone: The Big Red Burger, which is a patty melt the way Rayna would eat it with mustard, pickles and grilled onions on Jewish Rye and American and Swiss cheeses. It’s served with potato salad or any side.

For dessert, we have Cherry pie and Apple pie available today, coconut cream or banana cream (or both) available Wednesday and Jen’s Cheesecake of the week on Thursday.

In addition, it is National Hot Dog Day on Wednesday and we were reminiscing the old Hot Dog fundraisers in front of different stores we experienced growing up. So we are loading up a roaster with sauerkraut and hot dogs for Wednesday. We are also making our own hotdog chili to top your dogs with if that’s your thing.

We have new menus out with the wraps added so you can have wraps at any time. And we had our Air Conditioning serviced so it is nice and cool in the building which is a blessing for this hot week.

The Autumn Salad- Cool, crisp lettuce topped with Apples, bacon, red onion, egg, cheddar cheese and croutons. Customize your salad with grilled or fried chicken for a little extra. (This Salad will run all week)

It's Cheesecake Thursday folks! This week's vote wasn't even close. I could practically hear the city shouting "ROLO" from my house on Carlton Drive. 🤦😂

Rolo Cheesecake features a lightly caramel flavored cheesecake base in an Oreo crust. It's stuffed with whole Rolo candies, topped with a milk chocolate ganache made with Hershey bars and cream, drizzled with thick caramel sauce and topped with freshly whipped cream and Rolo candy garnish.

As a Rolo fan, it's quite yummy!

This week at The Carlton Diner

We are open again after a dining room deep cleaning and sealing the floors. We have to thank Hrutkay Farms for moving all of our dining room furniture out and storing it for us, then bringing it back to help us set everything back up and Linneman Painting for coming out on Sunday to double seal and anti-skid our dining room and bathroom floors!

This week, we are featuring some cool wraps for specials in anticipation of our menu change where we are making them available everyday until fall.

We have Blackberry Pie and Cherry Pie available for dessert and tomorrow is Cheesecake Thursday!

Hey folks! We have Cheesecake Tuesday for you this week since we will be closed for the holiday weekend. This is the perfect week for you folks who like your plain, boring cheesecake. Though Joe would probably argue there is nothing boring about this one.

Today we have buttermilk cheesecake for you in a Nilla Wafer crust with your choice of our house made blueberry or strawberry sauce. It's simple, it's light, it's delicious. 🥰

This Week at The Carlton Diner

It’s a short week for us and as a reminder, we close Friday at 2pm and do not reopen until Wednesday, July 8 at 7am.

So now let’s talk. Today is the coolest day in temperature for the entire week. Think about that, right now the air temperature is 85 and feels like 90. It will be in the 90’s all week with feels-like temps in the 100’s. Do you really want soup this week? Comment below if you do with the kind of soup you want. We are also not trying to have too many heavy specials, though we are making Lasagna later this week.

We will have pie and potato salad, as well as pasta salad on Wednesday.

It's Cheesecake Thursday and I'm (Jen) back in town! We didn't have a vote before I left, so this one is a riff on a dessert I made for my son's graduation party a few weeks back.

The dessert was Chunky Monkey Bars, which long term diner regulars may remember from our Covid Shut Down days. It's a chewy brown sugar banana Blondie stuffed with chocolate chunks. I had forgotten how good they were if you don't put the walnuts in.

So this week, we have Banana Fudge Blondie Cheesecake. The base of the cheesecake is a chewy banana Blondie stuffed with chocolate chips. The cheesecake itself is my roasted banana cheesecake and there's an entire pan of chunky monkey Blondie bars chopped up and distributed across the four cheesecakes I baked.

The whole thing is topped with a fluffy milk chocolate whipped ganache frosting that kind of tastes like a Hershey bar with the texture of cream cheese. ❤️

It's a top 5 for me and Joe swore a lot, and the empty plate was sitting here before I could even finish the post, so I'll go with he is also a fan. 😝

There is no cheesecake Thursday next week since we will be closing for the long holiday weekend for some renovations. BUT... Since you just went two weeks without cheesecake, I don't want to do that to you again.

So on Tuesday, I'll have two Buttermilk cheesecakes in a Nilla Wafer crust with your choice of strawberry or blueberry topping for the July 4th Holiday. 🇺🇲

This week at The Carlton Diner

After a very busy Father’s Day and our recovery after, we have several reminders and announcements we have to get out of the way.

First, over the July 4th Weekend, we will close on Friday, July 3rd at 2pm and not reopen until Wednesday, July 8 at 7am. During this period of time, we will be reconditioning and sealing our Dining Room floors to make them cleaner, brighter and easier for us to service. We appreciate your understanding.

Second, we want to remind all of our patrons that should you have a party of 5 or greater, that you should call us in advance so we can set up and/or plan for your arrival as our dining room is small. This should be done for any day, but particularly for the weekend and especially for Sunday. If you don’t call in advance, we will still try to seat your party as quickly as we possibly can.

This Thursday, the Bentleyville Lions Club has reserved the entire dining room for a special meeting and dinner at 6pm. Therefore, we will close the dining room at 6pm and only take carry-out or delivery orders from 6pm until 7pm.

Father’s Day Weekend at The Carlton Diner

First, let’s talk about today’s specials. As you know, Jen usually has cheesecake Thursday and explains her process to deliciousness. But as you know, Jen and crew are out of town so there is no recipe or detail about what almost made me a diabetic! Or so you think, which brings us to the tortellini.
This is a Jen creation and it is truly delicious. Tuscan Tortellini is a simple but elegant dish that will send your taste buds to another level. We sautee mushrooms, Italian sausage, sun-dried tomatoes, black olive and spinach in a little butter, then add chicken stock and the tortellini, simmering until the tortellini is tender. Then we finish it off with cream and Parmesan cheese until a velvety light cream sauce adheres to the pasta. The finished product is truly wonderful. Thank you Jen!

Our second special is our homemade baked meatball sub. We chained up Eileen downstairs and after she made her signature potato salad, she moved on to hand-roll a large bunch of meatballs! After baking them, we covered them in sauce then slow cooked in a large crock pot. They are tender, moist and delicious, served on a hard roll topped with provolone cheese and baked. They are accompanied by Eileen’s potato salad as a side, but you can get side you want!

For Father’s Day weekend, we are celebration dad with two specials:

NY Strip Steak and eggs, with 3 eggs, choice of potato and toast.

Big Daddy Breakfast, with 3 eggs, bacon, sausage AND ham with 2 pancakes or one of our malted waffles!

These are available all day Saturday and Sunday.
