Dune Truffles with Spice Melange and Gold Foil- (Semi-sweet chocolate, Heavy Cream, Korean Cinnamon, Blue Spirulina and Food Grade Gold Leaf). One of three desserts served this evening at The Babcock for the members only Oscar party.

Despite the promise of a follow-up post on the next aforementioned lamb burger, we had to repost this from instead!-

“Very excited to introduce the first of three flagship flavors, “el Caliente Chocolate Aguacate”, or the Hot Chocolate Alligator Pear. This ice cream is vegan and gets its texture from fresh avocado emulsified into a coconut cream base with 100% organic, single origin cacao. A lil’ bit of heat from fresh cracked black pepper and cayenne with some complexity lent by cardamom, cinnamon, a touch of clove and a pinch of smoked paprika. Incredibly rich chocolate on the palate, tiny perfect chunks of cocoa nibs and a texture so smooth you’d swear it had eggs and cream in the recipe.

Sourdough, Strawberry, Basil, & Honey-Whipped Ricotta Focaccia. Yes!

It’s fun to collaborate with nice people! Don’t mind the lamb samples, either! Thanks, Sara Hollenbeck! It might be a little while before the burgers are ready for retail but sharing in advance is caring in advance.

Lil’ at home R&D for of High Five Meats and Cowboy Meat Company. Working on seasoning ratios with a Madras curry lamb burger for retail pack to bring ready-to-grill patties to you.
The curry comes from Montana Tea & Spice Co. out of Missoula and the rest of the components came from our home kitchen:
A Naan Poppy Seed Bun, Grilled Baby Eggplant from the garden, Coralene’s garden Greens, Larry Ferro’s Ghost Peppers in an Aioli, a Tahini and Truffle Hot mustard, Goat Feta, Mango Bacon, Black Lentil Caviar, blah blah blah, etc. Despite how much was going on with this burger and the fact that we ate it cold, you could still taste a very nice balance of curry that cooperated really well with the rest of the components. Sara’s lamb is incredibly mild but unmistakable. 10 outta 10, would do it again.
We’ll keep you posted on the packaging and availability.

These are a few items created for the Well Pared downtown location which will expand its hours and its offerings starting July 12th. The new items include two brown rice wellness bowls (top left and bottom right), a golden beet salad (top right), some new açaí bowls and a beer and wine selection.
Consultation needs to be tailored to the needs of each establishment, and it’s totally up to the respective staff to sustain any changes. As a consultant, that entails being able to understand what it means to be an employee having to prepare the products offered. It’s one thing to have a good idea but knowing how to implement and execute that idea is key.
Give the hard working people a follow and a visit next time you’re in the area.
P.S.-The downtown store at 2710 1st Ave North is the only location offering the wellness bowls and the beer and wine list.

Vmbrello is pausing all special events for July and August to focus on a consultation project with another local restaurant. We’ll touch on that a bit more and provide some information on upcoming events in the very near future…
