Oven is on IR so decided to do a little practice rib and burnt end run on the 22’s. Trying out a few new things I learned… I would say the results were very successful. Ribs and polish bacon burnt ends were nice and easy treat!

Everyone sets goals in life. Some goals that are set other people don’t understand. I set a goal to recreate the MCRIB! Yes I know there is a lot of legal hoop la about this right now but this only makes my cause more purposeful.

I spent many hours researching and testing to be able to present to you……. THE MCDARREN!!!

100% ground pork shoulder with a blend of homemade seasonings, low and slow smoked, and then braised in a blend of barbecue sauces. Served on a pineapple roll with Chudds barbecue magic onions, and pickles!

Welp I took on the task of Beef Wellington for dinner! Bought the tenderloin at wait for it……ALDIS!!! Yup only $10 a pound! Yet hands down one of the best tenderloins I ever worked with. Fork tender with no tenderizing. Made a FLAT 21 assorted mushroom duxelles braised in port wine and wrapped in prosciutto. Used WIGDEY WAYNE CAROLINA GOLD as a binder and all wrapped in puff pastry! I will say I knocked this one out the park! MERRY CHRISTMAS TO ALL AND TO ALL A GOOD BITE!

Another shout out to yet another amazing local business! Big Bear BBQ Supplies is the place to go for all of your grilling or Bbq needs.

The Blazin Buffalo BBQ competition team purchased almost 80% of all the spices, rubs, sauces and other ingredients that were necessary to bring home our 2nd GC in Eden this year!

If you have not gone to this local business yet well then you’re going to the wrong place. Joe the owner not only owns this business but is a competitor in the bbq circuit as well. Sooooo he knows his stuff. Which is great when you come in looking for certain flavor profiles and he can point you to the products you will like. Sooo many things to choose from.

Stop in and check it out! And more importantly SHOP LOCAL!!

I’m a little late on this shout out but things got a little crazy after the comp with Sweet Beginnings Bakery 20th Anniversary and my knee replacement but I wanted to make sure I acknowledge this amazing local business!

As we know our Blazin Buffalo Competition BBQ team retained our title at the Eden Corn Fest Corn-Q bringing home First place Salsa and Grand champion and also scoring top 5 ribs and top 10 pork belly burnt ends.

There was a lot of practice that came before this big win and with out the help of Johnnys Meat Market getting me the brand of ribs I wanted and custom ordering specific standards in pork belly we would not have done as well as we did!

The customer service, patience and overall knowledge of their craft was unmatched. All on top of offering me the best prices. If you have not stop at this local Buffalo Business you’re missing out on Old School service and quality!!

Thank you to everyone at Jonny’s you were part of this win too!!!

In the beginning of this month our competition team competed in the Eden Corn Fest Corn-q. We had to try to defend our title from 2024.

We were up against 14 of the best pit masters from the area. They all put out some amazing food!

We took 1st place corn salsa and Grand Champion overall! I could not be more proud of my team. We worked our asses of and won!

You find the craziest stuff at Aldis!! Lamb split breast plate! HUHHH !!!! Right!!! Basically lamb ribs! I said challenge accepted! Prepared like a brisket and smoked like ribs and finished with a black bbq sauce! ( yup black bbq sauce is a thing look it up!!!) omg that came sooooooo goood!
