Wush Wush | Ginbo Keffa | Ethiopia | Natural

Washed | Heirloom | 1850m

Notes of: Guava Jam, Strawberry, Lychee

This coffee is a natural process, which means the coffee cherries are dried in cherry form, or in its natural form.

Sweet tropical fruits, juicy body, and a lingering strawberry sweetness will leave you coming back for more.

This coffee is the fruit of approximately 2500 smallholder farmers. These β€œgarden farmers” in the Wush Wush village bring their ripe cherries to Dinkalem Ademe’s washing station.

The people of Keffa carry their pride in coffee close to the bone. Legend tells that coffee was discovered by a goat farmer named Kaldi. Whether that's really how coffee was discovered or not, we do know the legend originates from Keffa, and the very name of our beloved beverage derives from this region in the southwestern highlands of Ethiopia.

Brew Guide: For espresso use a 1:3 ratio at around 27-32 seconds. For pour-over use a 1:16 ratio at a 2:30 brew time!

Ratios are coffee: water. For espresso, we measure dose: yield, or grams in: grams out.

SIZE: 11oz

This is our priciest option yet, going for 22.50

Wishing you all a lovely day! Today is my first mellow day at home to rest and get back to creating art while Noble goes to teach regenerative practices at the Emerald Cup. After two weeks of events we are feeling settled and ready to work on some video content to share with you thanks to the video help of friends and hope to have that out soon! Coming together with our community really puts into perspective why we are on this journey and how our past experiences are integrated in this vision. Thank you for following our journey and please let us know if you have any questions for our upcoming Q and A.

We would like to introduce one of the newer additions to our inventory: North Star Light by the women of Honduras. (The article is from 2018, but the coffee is a fresh batch). It is very important to us to highlight cooperatives that take into account environmental impact, spirituality, indigenous and minority ownership, and of course- quality care. We hope that our education around sourcing coffee mindfully will ripple out into how you choose every business that you support. Reach out if you would like to purchase!

We are rooting for the preservation of this species and hope that this would also mean we could grow our own coffee in our own region one day. It looks like it will be years from now.

Among the 124 species of coffee, Coffea Stenophylla rests as a mystery in terms of its flavor and likelihood of survival into the future.

Anyone who has visited Southern Humboldt probably knows about SigNature Coffee! They have been serving their community since 1988 and are featured in most cafe's throughout the county as well as quite a few places in Mendocino. After moving to a new county it has been a journey for us trying to find a replacement but eventually we realized we needed to get into this business to make sure that our friends and family in different regions can source amazing coffee such as this. We love this micro-roastery so much that Sierra showed up a little late to our wedding because she didn't feel like the day could be fully seized without first stopping for her favorite coffee, wedding dress and all. They go above and beyond direct sourcing from farms with certifications you don't see everyday such as "Rain-forest Alliance", "Bird Friendly", "Frog Friendly" because they see the importance in ensuring that the ways they offer the second-most traded product in the world is done in a way that gives back rather than taking away. We are now proud to offer their coffee to our supporters online and locally which they roast-to-order each time. For this first batch we have: Costa Rican, Brazillian (brewed in this video), Columbian, Sumatran, and their smooth blend called 420 blend which they used to roast with Cannabis seeds up until there were regulations against such. Really, there is no way we can paint a full picture of the rich history if this business, but the brews absolutely carry the story in their cells

We met with our direct sourcer and roaster at his shop in Redding Ca yesterday to make our business relationship official. We LOVE the detail and love that has gone into his craft down to the details of specially selected plant varieties and then offering multiple different drying processes of the same beans which brings out completely different experiences. We attended one of their free monthly cupping events and had the opportunity to taste each one of them side-by-side to determine our favorites. A very big perk of this relationship is that they are such a small business that they roast our orders fresh before sending them out. Our order will be here Wednesday but took 6 bags home with us in case anyone (including us) just couldn't wait. Of all coffee we have tried, they have remained our favorite. Thank you Feast Coffee !!!! Also, Emerald had a blast while we enjoyed our lovely drinks and conversation.

Decaf has a bad rap. For some cases, this is fair. The reality is that there is nuance to everything and for decaf there are important details to consider such as genetics, farming practices, and the style of decaffeination processing used. If all factors are chosen properly, this drink has the potential of offering numerous health benefits such as antioxidants, magnesium, B-3 aiding our bodies cleansing processes, and polyphenols boosting cognitive processes while helping protect from cognitive degeneration. The bitters in themselves are an essential component to a balanced daily diet ensuring proper digestion so just because it has had 97%-99% of it's caffeine removed doesn't mean it has no purpose. Our co-owner Sierra takes one week off of caffeine each month during her cycle to prevent tolerance build-up which allows the benefits of caffeine to be maximized on the days that she does partake. During her week off she opts for adaptogenic alternatives which we will post about soon, with the occasional decaf coffee . We feel that the right choice of decaf is a wonderful way to uplift while not taxing the adrenals. Let's break it down: make sure that your beans are 100% Arabica and grown with healthy practices, ask what processing was used. The three options we approve of are: sugar extraction, swiss water (which does compromise flavor), and CR3 co2 process. Currently we have on hand a CR3 co2 variety by Equal Exchange. This alluring decaf is balanced and sweet with tasting notes of chocolate, butterscotch, and brown sugar. This will most-likely remain our most affordable decaf and soon we also will be offering a pricier sugar-extracted option as well. We intend on having a relatively large price window so that our supporters can choose between great coffee at a great price, all the way to some of the top coffee's for those special occasions.
