Creamy smashed avocado layered on crispy toast, topped with perfectly cooked eggs and fresh tomato chunks β€” simple ingredients, BIG flavor, and total feel-good vibes.

𝐈𝐧𝐠𝐫𝐞𝐝𝐒𝐞𝐧𝐭𝐬:

3 slices rustic or sourdough bread, toasted

1 large ripe avocado

2 hard- or jammy-boiled eggs, sliced

1 small tomato, chopped

Salt to taste

Freshly cracked black pepper

Optional: drizzle of olive oil or pinch of chili flakes

Toast the Bread
Toast bread slices until golden and crisp but still soft inside.

Smash the Avocado

Grand Rainbow Fruit Platter

Ingredients:
2 cups fresh strawberries, hulled
2 cups fresh blueberries
1Β½ cups fresh blackberries
2 cups green seedless grapes
1Β½ cups red seedless grapes
3 kiwis, peeled and sliced
2 cups fresh mango chunks
2 cups fresh pineapple chunks
2 peaches or nectarines, sliced

Instructions:
Step 1: Wash all fruits thoroughly under cold water and gently pat dry.
Step 2: Peel and slice the kiwi, mango, pineapple, and peaches into even bite-size pieces.
Step 3: Hull the strawberries and keep them whole or halve if large.
Step 4: Place a large round wooden platter on a flat surface.
