New beginnings are never easy. Sometimes life takes us down paths we never expected, and closing a chapter can be one of the most painful things we experience. But I’ve learned that even in the hardest moments, there is growth, healing, and the opportunity to discover parts of ourselves we never knew existed.
Over the years, I’ve learned to take small steps, embrace challenges, and stay open to new possibilities. Through the struggles, I found strength, confidence, and a passion that continues to inspire me every day.
Back in 2019, when I opened La Galería Mexican Cuisine and Southern Illinois' first Mexican creamery, everything was new to me. I learned as I went, made mistakes, celebrated victories, and fell in love with what I do. What started as uncertainty turned into passion. I went from doubting myself to believing in myself and discovering a side of me I never knew was there.
Today, I am beyond excited to continue this journey. What began with simple natural aguas frescas and mini pancakes, has grown into something much bigger. I now get to bring back to life my original passion of making ice cream and Mexican paletas (popsicles), and we are excited to soon begin offering catering services as well.
One of our biggest dreams is becoming a reality! Not only are we getting a commercial kitchen we can call our own, we are building it in the comfort of our own backyard. This will allow us to expand our menu, create new products, and continue sharing our passion, and taking it to our community.
None of this would be possible without the support of my husband, who has always believed in me, encouraged me, and reminded me of what I’m capable of, even when I couldn’t see it myself. He has been part of the whole process, has been up at sunrise, and worked until sundown on making sure the building project is running smoothly. Everything from planning the layout together, to moving dirt, scheduling estimates, crunching numbers, picking up and dropping off heavy machinery and equipment, purchasing the building materials, and just taking part in the whole building process himself. Together we are building this dream.
This journey hasn’t always been easy, but every challenge has led me here. I’m grateful for the lessons, the growth, and the opportunity to keep doing what I love. Here’s to new beginnings, big dreams, and all the possibilities that lie ahead.❤️
