This is why I love my Auto Akorn. Pit ran for damn near 30 hours from 225° to 350° and look how much coal is left. It certainly helps I only use lump. Most efficient package there is.

Tried the ham smoked like a pulled pork. Sm9ked at 250° for about 9 hours. Honestly, it needed more time but mouths were hungry. I made a glaze that consisted of whiskey, maple syrup, cherry preserves and OJ. I would say the glaze stole the show. The hame was a 7/10, give me my double smoked spiral cut any day of the week.

The local had their grand opening and ribeyes on sale for $6.99 a pound. Dry brined them for 2 hours in The People's Rub (I swear it's coming soon). Front seared on the kettle then let it finish indirect to 125-130. Threw some potatoes and corn on as well. 9/10 in ex*****on and 10/10 on feeding 5 mouths for under $30.

Finally broke out this rib roast from over the weekend. 4 pound roast, sliced into 4 thick cut steaks. We used the Peoples Rub on most, and some seasoning my friends at sent me. Hit a high heat front sear using hickory lump. Grilled to a perfect medium rare. I will say it was one of the best steaks I have ever made.

Was visiting my cuzzo and fam on Christmas Day. They had friends over. The husband talked about this sausage Conecuh, and was nice enough to give me a pack. He recommended grilling over live fire, which I did tonight. It did not disappoint, SO good. I gotta figure out how to order this stuff online, they don't sell it in the DMV.
