In Charlotte, we're getting pretty close to the first frost. It's a significant date for farmers because it signifies the end of the warm growing season and the start of the cold growing season. Your summer favorites like summer squash and zucchini that are still hanging on will be finished off by the first frost.
Crops that can grow in colder weather have a special way of protecting themselves from freezing. Once the outside temperature reaches freezing, the plant will begin to convert starches to sugars. This acts as a natural antifreeze, lowering its freezing point.
This means many winter staples will get sweeter: carrots, parnsips, turnips, cabbages, collards and more. It's another reason to get excited about eating seasonally. See if you can spot the difference this fall once our first frost arrives. ❄️🥕
