Sometimes I think we take certain things for granted in pizza.
Ten years ago, maybe it was because I knew less about the craft, but I remember pepperoni mostly being… pepperoni. Flat, simple, and pretty much the same everywhere. And don’t get me wrong, I still love a classic old-school flat pepperoni pie.
But somewhere along the way, products like changed the game.
I still remember the first time I had a slice topped with properly cupped and charred pepperoni. The way the edges curled up, the way the fat rendered into those little flavor cups, the crisp texture, the spice, the smokiness. It completely changed the experience. It was one of those moments that made me realize pizza can always get better.
A huge shoutout to the folks making incredible products that continue to raise the bar. As pizza makers, we’re lucky to have access to ingredients that keep getting better year after year.
