"When I go to Italy, I typically keep a journal, you know? I always like to document what I'm doing, what I'm eating, what I thought and so forth. So I always go back on those later. And it's inspiration. If it's not the dish exactly, which a lot of times it's not, but it's aspects or, or things that inspire you to do something, with ingredients closer to home and how you do it."
