🚇10th Anniversary El Train IPA🚇

We’re taking a trip down memory lane for our third 10th-Anniversary release! El Train was the first IPA we ever brewed, and we’ve given this classic a major upgrade. Our all T90 hopped IPA has been modernized after 10 years of advancements in hop products & techniques. Mosaic cool pool, Simcoe HyperBoost hop dip & Citra Cryo dry hop (to name a few) built on a robust yet refreshing malt body with firm bitterness. A nostalgic nod to our IPA of yesterday, reimagined for today. And like all our 10th Anniversary throwbacks, we feature the original artwork.

Cruz Blanca will be open for lunch on Friday, July 17, until 2 PM, then closed for the evening for a private event.

A full brewery, tacos for the table, margaritas in pitchers, and cerveza within reach. It’s a pretty convincing argument for having a party!

✨️10th Anniversary Paloma✨️ - Tequila Barrel Aged Grapefruit Gose

After a decade of iterations, we have released the most extravagant version yet!

While the recipe and style has evelved through the years, Paloma has always been inspired by Mexico's beloved grapefruit-cocktail of the same name.

For the first (and maybe last) time ever, our 10 year version is aged in añejo tequila barrels, adding a great layer of complexity to an already bright, salty, & zesty sweet treat.

We have a limited amount on draft with 2 packs available to-go of this incredibly special beer.

✨️10h Anniversary Lager Especial✨️

What makes this pub exclusive release so special? It's brewed using a historic lager yeast strain from the original Cruz Blanca Cervecería in Mexico that inspired our brewpub here in Chicago.

The yeast was preserved in the Siebel Institute of Technology archive for over 60 years and was carefully revived and propagated from a few single cells by Lallemand Brewing in Montreal. The samples were then shipped to Escarpment Laboratories and grown over the course of a month to an amount large enough for us to brew with. Genetic testing confirmed it is a clean-fermenting strain closely related to the same German lager yeasts to which some of the first lagers in Mexico where brewed with.

The can artwork draws inspiration from vintage Cruz Blanca designs, connecting historical roots with our present-day identity. This project serves as both a celebration of our brewpub's core lager and a meaningful tribute to our brand heritage.
