To our dearest community…
We are so very sad to write you all today to let you know we will be closing our doors to our amazing, Fausto restaurant.
Fausto was a restaurant we wanted to open to inspire people to eat better and feel better. A place where our food would change with the seasons, as food has for many years before us. A place where our food inspired the art in and around the lovely CAC. A place where our staff could feel at home, and feel inspired to take what they’ve learned to their home. A place where we could turn a simple meal into a friendship that lasts forever.
One of the favorite languages of my brother and I has always been food. It is the language that brings us as people together. We were inspired by local farmers, what they grew, raised, produced, and shared with us. From the quails, to the mushrooms, the beets, to the arugula, the farmers are what drove this restaurant, giving our kitchen team, and most importantly our Chef Phil inspiration to work out of the elements of the ordinary to create, cook, and feed people dishes that were something you may not have found at your average spot.
We thank all of our staff from our opening day ’til now for all of your help these past 3 years. And to our Chef Phil, who has been with us since day 1. Phil you are a rare breed, a breathe of fresh air, an amazing human, with an amazing heart, and an amazing talent in the kitchen. Thank you for helping us through the hardest of times. You have grown into an amazing leader, chef, and now mentor.
If you loved Fausto, we invite you to visit our sister spot where we serve coffee, pastries, brunch, lunch and even bistro nights.
We received so many reservations for our final December 22nd dinner that we decided to open up a second dinner on December 21st.
