The experience starts right through the door. Guests are greeted by the in-house Butcher and a sparkling meat counter where guests make their selection from the featured cuts of the day and place their order. Owner Jacob Trevino [also owner of neighboring Overlook Lodge, Walnut Hill’s Video Archive and Downtown spot Tokyo Kitty] explains that the idea for the concept is deeply ingrained in his own personal nostalgia.
“Growing up in Texas, we would always visit counter service steakhouses. They were a place that the whole family could enjoy without much fuss, or breaking the bank. The older I get, the more I long to go back there. I can’t build a time machine so I’m building a restaurant.”
