On today’s episode of how to cook with Betta Goetta… !!!
Can’t believe it took this long for me to try it but the answer is a resounding YES, YES IT WAFFLES!!

And what’s great with waffled Betta Goetta? Regular waffles, of course. I suggest cooking the waffles first, holding them warm in the oven, then cooking the Betta Goetta ‘cuz it takes 10-15 min to crisp up. Enjoy!!

The struggle of home cooking, for me, anyway, is the balance of making food that is nutritious and also tasty, and I find more and more that it makes sense to prioritize in that order. I know many of you have the same daily dilemma. This combo hits both, tastes indulgent but is quite healthy! Sweet and savory breakfast (or any meal) suggestion for the day: roasted sweet potato topped with crumbled Betta Goetta, bananas, chia seeds, micro greens, and maple syrup. Mmmmmm

Do you walk your dog(s) in the morning? Wrap sweet potatoes in foil - keeps skins soft- and throw them in a 375° oven before you walk out the door. Cook for an hour or so, depending on how big they are, until a knife can pierce to the center smoothly. Ready when you get back home!
