Our Halloween weekend is coming up.

Friday night is a funky ass show with our friend Jason Perry.
And Saturday night is our Halloween party. This is one of the nights that we really love and we've been looking forward to it all year.

I had some French onion soup left over from the weekend special. It's Soup Monday. So let's turn that into a beef and barley soup. Trim from breaking down our bite-size steak. I added carrots, celery, mushrooms, and cooked pearl barley. Seasoned with thyme, garlic, and bay leaves.

10/31 is Halloween. It's our annual Halloween party. Always a blast. All the amazing costumes. Dance party with our absolutely amazing friend, CoDJ. All the Halloween, fun people, fun jello, cash prizes for best costumes.

This is a nod to a Peruvian soup called sancochado. The only thing I had left over from the weekend special was some of the Peruvian aji panca.
I went a little hard on the tomato and chile paste. So, it's a little more red and thick compared to the normal clear, clean broth. This is a medium spicy beef stew. With loads of root vegetables the yucca with red, yellow, and sweet potatoes. Made with a sofrito of onions, peppers, aji panca, tomato and garlic with a junk of cumin and black pepper.

I turned down the volume on the music. Sorry.

We're doing a Cheesesteak as our weekend special. I wanted to give it a little different feel and try something out. I personally don't like bell peppers on a cheesesteak but I do like the chili pepper flavor. So I made a sauce of the Peruvian chilies Aj Panca, Aji Amarillo, and Aji Marisol. Mix those with a little soy sauce, vinegar, garlic, and cumin. Cook all that off with mushrooms, onions, American cheese, and provolone.

And even with all those chilies it's not spicy it's just a really good version of a cheesesteak.

Keep it simple this week. Chicken and bacon stew with potatoes and spinach. It's 7 ingredients and some seasonings. Basic and straight forward, while being both delicious and filling.
