Wisdom from the coffee pot

On the left is coffee. It was once beans that were coarsely run through a grinder. Hot water will run loosely over it and brew 10 cups of coffee.

On the right is espresso. It was once beans finely run through a grinder. Just a portion of this will be packed with 30lbs of pressure into a puck at which point the machine will force pressurized hot water through it to make a tiny concentrated shot of espresso. It takes longer to grind. It endures more pressure and heat than the coffee. It makes a lesser amount of end product and yet tastes stronger in its’ 1oz than the entire pot of coffee.

If you’re feeling like trials are taking too long...like life is giving you more pressure than the rest...if you can barely stand the heat.. maybe you’re just espresso. Maybe 1oz of you is stronger than a whole pot of the rest of us.

We aren't sure what weather will do or what the city of Clarksville will do either, for that matter.

But as it stands right now, Joe's job is opening late and Amanda has a jury summons in the morning.

So, whatever you end up doing, do it like cinnamon and milk and make stuff weird.

We will not be opening tomorrow, but weather permitting we will be there Tuesday.

Better is always Better

Better is always better. That seems obvious. But many would have you think that better quality means having to take out a second mortgage or sell all of your knickknacks on Facebook Marketplace in order to afford the one thing you want. But we disagree. What many people don’t know is that oftentimes better is right there and only costs fractionally more. It is. I promise. As far as coffee is concerned, a better environment for the workers at the farms usually equates better coffee. That’s why we support fair trade certified coffee suppliers, like Peace Coffee in MPLS, MN. (And why we brew it also!) Shade grown coffee, is just... better. For everyone. More vegetation means more homes for our feathered friends. [True] organic coffee isn’t treated with any kind of chemicals or pesticides, which may mean you might not get as much yield, but is usually worth it.

That said, we care about you. We care about the farmers and their workers. We care about the little birdies. We care about the trees. We believe it’s our job to take care of the world we have been given and it’s alright to make you and me a priority. That means we are serious about what we do, and we are serious about you. Relationships matter. So at the end of the day, what is Two Birds Coffee Co.? It’s a whole gaggle of people caring for one another and their needs, laughing and sharing life together, all over a cup of coffee that could be about as good as anyone else’s. But it’s not. It’s just better.
