A roux is the foundation for all of the best Cajun dishes. When we opened The Roux, we knew it was just that. The beginning of something even better.

There’s been rumors that we’re closing, and there’s some truth to that. This Saturday, October 28th, will be our last day open at The Roux. But we hope that you’ll join us in our excitement about what’s next.

Many of you know that we have family ties with the Piggly Wiggly of Collinsville and we’ve decided it’s time to go back home. We’re taking our love of Cajun food and combining it with our roots in southern cooking. We’re choosing our favorite dishes from The Roux and bringing them together with our favorites at the Pig… and we’re creating something new.
