July 9th’s Chefs Dinner menu
Smoked and Grilled theme ( component from each course will be either smoked or grilled or both )

Course 1: mead marinated peach, smoked peach, ham hock, candied pecan, pickled blueberries, Merlot-cinnamon glaze, micro greens.

Course 2: smoked Brie cheese, French baguette, pickled strawberries, crushed pistachios, rosemary, micro greens , fig glaze.

Course 3: grilled swordfish, fennel-garlic broth, charred carrots , blistered tomatoes, chimichurri.

Course 4: build your own tacos!
Pan seared adobo marinated kangaroo tenderloin, smoked pineapple, queso fresco, onions, jalapenos, cilantro, lime, sour cream, mole sauce, salsa verde, blue corn tortillas.

Course 5: smoked pineapple, grilled rosemary and olive oil pound cake, pineapple caramel, vanilla whipped cream, brûlée cherry, cherry reduction.
