Perfect and puckery. Bouncy and bright. A flagrant defier of the laws of physics (it’s both ethereally light and extraordinarily creamy). Exactly like a watermelon sour candy. If it wasn’t summer before, it is now.

One kind of cocoa wasn’t enough for Confetti Brownie Batter. So we used two. Fair Trade brown cocoa combined with black cocoa, for the smooth, fudge-like quality of a dark chocolate brownie. We’d eat it by itself. But the sprinkles make us smile.

A while back, we tried those boxed brownies with the rainbow candies on top because we wanted to see if they were as good as we remembered. They weren’t. This is.

A dark and decadent chocolate custard with notes of butter and brown sugar. Made with two types of cocoa — classic brown Fair Trade cocoa and velvety, fudge-like black cocoa — for extra layers of chocolaty depth. Bittersweet (gluten-free!) brownies. And a confetti toss of rainbow sprinkles.

The Strawberry Shortcake Parfait started as a staff-favorite, secret-menu-esque pairing. When we realized that Strawberry Buttermilk paired with Gooey Butter Cake tasted like a strawberry shortcake. A few years ago, we decided to make things official. With layers of sweet-tart strawberry sauce and featherlight whipped cream that take this pairing from “seasonal favorite” to “holy moly that’s so f*cking good.” It’s no wonder we’ve never looked back.

STRAWBERRY BUTTERMILK is our attempt to stop time. To suspend those few fleeting weeks when fresh strawberries are transcendent. Ripe, juicy, fragrant. Strawberries you can smell. That’s what this ice cream is about.

We buy up as many as we can. Blend them into cream with a splash of fresh buttermilk to amp up the tartness. Then devour it all.

Back in shops: BURNT ORANGE DREAMSICLE.

Like the classic citrus-and-vanilla combo, only deeper. Gooier. More vivid and satisfying. Courtesy of our burnt orange caramel: a knockout of a sauce that sharpens orange juice, zest, and pulp with a toasty, nutty edge. Folded into sweet cream for a vibrantly juicy orange ice cream. Swirled with salted vanilla custard. And rippled with more of that burnt orange caramel to turn the dream factor up to 11.

It’s buttery and nutty with a hint of salt—the perfect flavor pairing for ice cream. Because I know not everyone can make it into a shop this summer, I’m sharing my recipe so you can enjoy a cone at home (ideally with a scoop of Strawberry Buttermilk ice cream). You can also use the cone batter for countless variations: cones big and small, or make cups to plate and serve a crowd. Or fold it into fortune cookies and serve alongside a sundae. 🍦
