belgium’s liège waffle has been one of our favorites to put on the table. the dough is pressed with pearl sugar that caramelizes into the crust, then we load it up.

crème fraiche, hollandaise, kaluga caviar, chives, and waffle chips with sour cream & onion.

we’re paying tribute to india, a country where spice is a love language and every street corner smells like something worth stopping for. this cocktail leans into that.

this one has been a team favorite. all the way from singapore 🇸🇬

sea trout + coconut + curry

a rich, coconut-heavy broth, deep with spice with crispy skin sea trout, rice noodles, tofu puff, viet coriander, bean sprouts, crispy rice noodle and chili sambal.

few soups have a neighborhood this devoted to them. Katong Laksa belongs to Singapore’s east coast, a Peranakan enclave where Chinese and Malay cooking slowly became something entirely its own.

our next stop: peru 🇵🇪

tilefish + aji amarillo + plantain

ceviche has been feeding people on the coast of peru for thousands of years. the original versions were cured in the juice of tumbo, a native passion fruit, long before lime ever arrived on the continent. today lime is the standard, but the dish never lost its roots or its sense of place.

our take with tilefish cured in lime peel, tossed with red onion, sweet potato, aji amarillo, serrano, and cilantro. served with plantain chips on the side for the ever important scoop.
