Straight from the Oregon forest to your glass. 🌲

When I Tip, You Tip, We Tip drops today — a Hazy IPA brewed with fresh hand-picked spruce tips gathered by our team from Starker Forests along the Oregon Coast.

We harvest the spruce tips when they're fresh to store and add to our winter favorite, Hoppy Holidays. To capture the most vibrant flavor from the tips, we added a portion of this year’s harvest directly into this hazy release, bringing bright pine character, citrus zest, and an unmistakable blue raspberry note that feels wild in the best way possible.

Rounded out with malted oats and wheat for a soft, pillowy finish, this beer captures a little bit of the Pacific Northwest in every pour.

Devil’s Staircase is dropping tomorrow šŸ»

Before IPA culture. Before hazy beer. Before craft brewing became what it is today — there was Cascade.

Originally developed in Corvallis, Oregon, Cascade hops helped define American craft beer with their unmistakable citrus and floral character. Now, Oregon breweries are re-exploring that legacy through Oregon Homegrown 2026 — a statewide collaboration celebrating the farms, brewers, growers, and innovators that continue to shape Oregon beer culture from field to glass.

Our newest release, Devil’s Staircase, was brewed as part of that collaboration.
This PNW Pale Ale explores a fresh expression of Cascade hops, the variety that helped launch the American craft beer movement right here in Oregon. Brewed with ’ ā€œDeep Cutā€ Cascades — left on the bine longer for a deeper, more modern hop character — Devil’s Staircase delivers familiar notes of pine and grapefruit layered with extra juicy tropical aromatics.

Brewed in partnership with and breweries across the state, this beer is both a tribute to Oregon brewing history and a look at where it’s headed next.

Cassidy returns this Friday šŸŒøšŸÆ

Inspired by co-founders Nick & Kristen’s daughter and blended every spring since 2015, Cassidy is one of the most personal releases in our Cellar lineup — a 8.90% ABV wild farmhouse ale matured in Sauternes wine barrels and conditioned on spring flowers and honey from her grandpa’s hive.

Each year’s blend carries a portion of every previous vintage forward, creating a beer that continues to evolve with time.

Wildflower aromatics, layered honey character, soft notes of hibiscus and rose petals, and a pleasantly dry finish make Cassidy both delicate and deeply complex.

Built with longtime Eastern Oregon legends , this year’s Alumni Club release is officially in the making šŸ»

Brewed to spotlight the program and its lasting impression on the beer industry, this annual collaboration highlights the grads, brewers, and community continuing to shape craft beer far beyond Corvallis. Several of our brewers went to OSU, and we always appreciate being able to work with a fellow grad.

This year, we teamed up on a crisp, hop-forward West Coast IPA that we can’t wait to share more about soon.

šŸ—ŗļø 45 Below: A New Zealand hop-driven release arrives today.

This New Zealand IPA is built on the collision of hemispheres — where Northwest grain meets the expressive intensity of Southern Hemisphere hops.

Superdelic, Riwaka, and Nelson Sauvin lead the charge, bringing layered notes of lychee, candied citrus, and tropical fruit over a light, structured base. It drinks clean, but not quiet — bright aromatics up front, with a crisp, snappy finish that keeps everything in line.

It’s a study in contrast: clarity and character working in balance, with enough hop expression to stretch across 90 degrees of latitude.

A returning favorite brewed in partnership with the , built for long summer nights under stadium lights.

This Kƶlsch is all about restraint and drinkability — soft biscuit malt character layered with a clean, crisp finish and just enough hop presence to keep it bright. Fermented cool and finished smooth, it lands somewhere between ale clarity and lager-like snap. A beer designed for the warm season, and for whatever inning you find yourself in.

🌲 Yesterday, we ventured into in the Coast Range to pick 325 pounds of fresh spruce tips for a couple of our beers. This is one of our team’s favorite outings each year, and the weather was perfect for it.

Wild spruce tips add blue raspberry, citrus, and pine flavors to a beer.

We’re lucky to work with Starker Forests, which sustainably manages its forests, has strong ties to Oregon State’s College of Forestry, and is involved in the Corvallis/Philomath community.

šŸ‹ Caves Saison No. 005 releases this Friday at Block 15 and Caves.

This 7.00% farmhouse ale is shaped by time, patience, and a little bit of history. Brewed for our sister restaurant, Caves, this release continues a traditional solera process—where a portion of the original beer lives on, blending into each new batch. The result is something layered, evolving, and quietly complex.

Batch 005 spent its season resting in oak, developing into a delicate, fruit-forward saison with notes of stone fruit, bright lemon zest, and soft ripening character.

Take some home, or stay awhile and let it open up in the glass.
