This cocktail unites Green Chartreuse and Campari with fresh lime and a touch of sweetness. The two interplay in a dancing juxtaposition that will have you coming back for the next sip. The result is layered and refined — bright citrus, alpine herbs, and a poised bitterness that lingers long after the first taste.

Created by Nick Bennett of Porchlight and inspired by A Gentleman’s Guide to Love & Murder, this cocktail is composed, dramatic, and impeccably balanced.

A rare evening at Caves.

Our Bourbon Dinner is one of only two we host each year — a thoughtfully curated, multi-course experience with pairings designed to complement every plate.

The evening is anchored by pan-seared lamb chops finished with a bourbon-juniper jus, beetroot gratin, and wilted greens, thoughtfully paired with ’s Barrel-Aged Bourbon Barleywine. Each course unfolds as part of a carefully composed progression of seasonal plates and selected pours.

On the evening of February 17th, join us at Caves for an exclusive Bourbon Dinner—a curated multi-course experience with intentional pairings, made to highlight the quality, sourcing, and hospitality we’re proud to serve every day.
