Zia Cuisine The ZIA tradition started in Embudo, New Mexico, a tiny mountain village nestled at the confluence of the Rio Embudo and the Rio Grande.

Due to staffing changes, our hours for the next three weeks are 3pm - 8pm, Tuesday through Sunday. Zia's last day will be March 27th.

We want to thank you all for all the support and suggestions! Corvallis regulations make it difficult for food trucks to find a permanent spot to operate from. Corvallis is our home and you all are our community-we have kids who have gone to high school here, and University and now I have grandkids in elementary school. We don't want to leave or work elsewhere, so again thanks for all your suggestions and support-means so much to us.

As we start the winding down process, we want to give a shout out to Michele from Corvallis Culinary Connections. Michele has been active for 10+ years working with the City of Corvallis to find spaces where food trucks can park. She created Corvallis Culinary Connections during the pandemic lock down.

During the lock down, when we were really struggling, Michelle showed up at our kitchen and took these photos for us. These were photos that we desperately needed and Michelle clearly just wanted to help out in any way that she could. If you all are interested in having food trucks in Corvallis, please give her some love and your support. Who knows--maybe one day food trucks will have more options then they do now!

The Zia family wants to thank everyone in Corvallis for all your support over the years! Unfortunately, Common Fields informed us yesterday (Tuesday, March 2nd) that they have decided to "rotate all of the current food trucks and replace them with new ones" and have asked us to leave.

Since this came as a complete surprise to us, we do not have any other back-up opportunities lined up and can no longer afford to stay in business. So, it is with an incredibly heavy heart that we have decided that it is time to shut down Zia--both the food truck and farmers market booth.

Zia started out as a way for a family of transplants from New Mexico to share their food and culture with Corvallis. We have always tried to stay true to the New Mexican cuisine and culture while maintaining high food quality.

AND YOU ALL GOT IT! You not only understood but also appreciated what we were trying to bring to Corvallis. So once again, thank you all! You have all been amazing!

We do not know when our last day is-as I said we only found out yesterday and are still in a state of sadness and shock and honestly panic since this has been our livelihood for close to 10 years. But when we figure things out, we will let you all know. If you want to make sure that you get some Zia grub before we are gone forever, stop by soon.

We would like to thank Corvallis Farmers' Market for giving us our first opportunity to share Zia with you all and who have been huge supporters and were so helpful during the pandemic shut down.

In the article, they refer to ‘buñeleros’. When I was a kid in northern New Mexico, the older people referred to sopapillas as buñelos!! Now I know where that word came from : ) Zia's twist on the traditional sopapilla is our sopa bites, served with honey. Yum!!

Due to Common Fields family emergency and staff shortage, the hours of operation continue to be 3pm to 8pm. Until further notice, Zia will be open 3pm to 8pm Tuesday through Sunday. We apologize for the inconvenience this causes and hope to be back to normal hours next week.
