Chef Callan was born in New Orleans in the 1960's and grew up surrounded by Crescent City culture and southern heritage. He is the great grandson of Matt and Margarett Franichivivh, owners of the famous Vienna Gardens Restaurant on Rampart Street in the early 1900's. Callan was raised on the recipes of his ancestors in his family's kitchen. Chef Callan began making his own mark in the kitchens of

local restaurants in 1977. He studied under Chef Terry Newkirk and Chef Greg Surry in the early 1980's, until he moved on to become Executive Sous Chef for ITT Corporation, handling production for the Sheraton chain of fine hotels. Later, he became Executive Chef for Morton Anderson, New Orleans Saints Hall of Famer, at his beloved local eatery Champions. Next, he was called on to become the founding chef of The Times Bar & Grill, a local chain restaurant. Finally, after decades of experience honing his culinary skills, Chef Callan made the decision to team up with his family to open Louisiana Grill, a popular family restaurant and catering service. During Chef Callan's restaurant career he has done it all, from giving demonstrations at the New Orleans Jazz & Heritage Festival to catering for the prestigious NFL Players Association Superbowl Party. He also shared his gifts by hosting a well-received local television show, Louisiana Grill's Hidden Treasures. The recipes Chef Callan presents to the public exceed expectations and encompass almost 100 years of family tradition and culinary passion.
