It is medium ground: "You want it to have some air in there, and a bit of bite." Don't squash it: "People make the mistake of pressing down on the burger. You need to get the balance right between tight meat and loose meat. It's an art."
Assuming it's a really good burger, it's juicy, meaty, greasily satisfying. The bun should be slightly crunchy on the outside and soft inside.
