This is one of my favorite Springtime dishes. Risi e Bisi is a dish that originated in the Veneto. When I was 14, I took my first trip to Venice and Verona to see my Aunt, who was an opera singer, perform La Traviata. So a bowl of this-not-quite-soup-not-quite-risotto, bursting with tender peas and crisp pancetta brings back a flood of happy memories for me. Hope you enjoy!
