Lockhart!, I’m coming hungry — and I’m excited to be part of this years TM BBQ Fest!!

I just got my tickets to the Texas Monthly BBQ Fest, November 7–8 in Lockhart, TX — the barbecue capital of Texas, and I am NOT showing up to play around.

Saturday is the BBQ World’s Fair: barbecue everywhere you look, live music, a vendor marketplace, live-fire cooking demos — and it’s FREE to get in. You just pay for what you put in your face. And trust me, you will put a lot in your face.

Sunday? That’s the big one. Bites from 36 of the Top 50 BBQ joints in Texas. Thirty-six. In one place. Insane!

What’s for lunch? Maitake x Cavatappi 🍄

Still on my easy-to-prep vegetarian run, this one’s a lighter take on cacio e pepe. Chickpea cavatappi, crispy Maitake (aka hen of the woods, my new obsession), fresh arugula, roasted garlic and fresh black pepper.

Skipped the Parmesan to keep it lean and honestly didn’t miss it. Filling, flavorful, and proof that simple still hits.

What’s for dinner? Bunapi Mushrooms X Konjac Noodles!

I’m working on expanding my skillset on vegetarian dishes and being able to bring variety to my clients and operators. Bunapi mushrooms are always a great way to increase protein and fiber and have a diverse menu.

This dish was pretty easy to execute and full of flavor with a Latin Asian twist.

¡Mi Gente! What an honor to receive, I’m forever grateful and humble to receive this nomination by Visit Dallas | Things to do in Dallas and the City of Dallas. I honestly am extremely thankful for everyone that’s been with me on this journey, from friends, family and my Kalie for being my bedrock. This is a reminder that it’s siempre pa alante despite the hurdles and we never quit.
