So this week I got to help with a “school project”… and I’m still not convinced I didn’t get the better end of that deal. 😄
A young Spanish class student needed an authentic cake from the country he was researching—the Dominican Republic—and I was lucky enough to be part of it. He chose bizcocho dominicano, and I went in thinking I’d just be making a cake or cupcakes… but it turned into one of those projects that reminds you how much food is tied to family, culture, and memories (with a little extra pressure to get it just right!).
He decided on cupcakes for his classmates, so The Cake Sisters got to work. First, we made the homemade pineapple jam filling (which takes a few hours). While that was simmering, we mixed up the light, airy Dominican cake batter and scooped the cupcakes. While those baked, we started the suspiro (that beautiful meringue topping).
After cooling, filling, and topping, The Cake Sisters taste-testers gave it a big thumbs up! 👍
Meanwhile, he gets to turn in cupcakes with his presentation… and I’m over here wondering where these assignments were when I was in school. I would’ve had straight A’s. 😊
Grateful he trusted me with something so meaningful—and if this is what school projects look like now, I’m available for tutoring anytime. This was a lot of fun!
